Why is my meringue chewy instead of crisp?

Crisp and chewy are set by the sugar ratio and the drying, not by the whisking. What decides which you get, and how to move a meringue deliberately in either direction.

Short answer

Chewiness comes from moisture still held in the sugar structure. Use a full 50 to 60g of sugar per egg white, whisk until no grains can be felt between finger and thumb, bake very low — around 100 to 110°C — for a long time, and leave it in the switched-off oven to dry completely.

Do this first

Meringue is a sugar structure with air in it, and sugar is hygroscopic — it pulls in water and holds on to it. Every difference between a crisp meringue and a chewy one is a difference in how much water is left in that sugar by the time you eat it. That is why humidity affects meringues and almost nothing else in baking.

Step by step

  1. Get the sugar ratio right for the outcome you want.Around 50g of caster sugar per medium egg white gives a meringue that will crisp. Push towards 60g for a harder, longer-keeping meringue. Below about 40g there is not enough sugar structure to dry crisp at all, and you will get a soft foam whatever you do.
  2. Dissolve the sugar completely.Add it a spoonful at a time after soft peaks, and keep whisking for a couple of minutes after the last spoonful. Rub a little between finger and thumb — any grittiness means it is not dissolved, and undissolved sugar is what beads and weeps.
  3. Decide crisp or marshmallow before you shape it.For crisp through, nothing but whites and sugar. For a pavlova with a soft centre, add a teaspoon of cornflour and a teaspoon of vinegar per three whites — the cornflour holds moisture in the middle and the acid stabilises the foam.
  4. Bake low and long — this is drying, not baking.100 to 110°C in a conventional oven, or 90 to 100°C in a fan oven. Small meringues want an hour to ninety minutes; a large pavlova wants two to three hours. You are removing water, and water leaves slowly.
  5. Cool it in the oven.Turn the oven off and leave the door shut. A meringue moved from a warm oven into a cool kitchen cracks from the temperature change and picks up moisture from the air as it cools. Several hours, or overnight, is normal.
  6. Store it airtight the moment it is cold.A tin, not a plastic box with a poor seal, and never the fridge, which is the most humid place in the kitchen. Properly dried and stored, meringues keep for weeks.

Tips

  • Do not attempt crisp meringues on a very humid day if you can avoid it. Sugar draws water out of the air faster than a low oven can drive it off.
  • Older egg whites whisk to slightly greater volume than very fresh ones, which is one of the few genuine uses for eggs approaching their date.
  • A pinch of cream of tartar per white makes the foam noticeably more forgiving without affecting the crispness.
  • Meringue cooked on baking parchment lifts off cleanly. On greaseproof or a greased tray it welds itself down.
  • If you want both textures, bake the shell at 110°C for the first thirty minutes and then drop to 90°C — the outside sets before the inside dries.

If it doesn't work

Chewy all the way through

Cause: Underbaked, or removed from the oven while still warm and damp — Fix: Longer at a lower temperature. Two to three hours at 100°C for a large pavlova, then turn the oven off and leave the meringue inside with the door shut until completely cold — often overnight.

Crisp shell, marshmallow centre

Cause: Normal for a pavlova, and usually deliberate, but also what happens when the oven was too hot — Fix: If you wanted it crisp through, drop the temperature by 20°C and extend the time. If you wanted the soft centre, that is what cornflour and vinegar in the mix are for.

Crisp when cool, then chewy the next day

Cause: Atmospheric moisture — the sugar has reabsorbed water from the air — Fix: Store in a genuinely airtight tin as soon as it is cold, never in the fridge, and never with cake or anything moist. Ten minutes back in a 100°C oven will re-crisp them.

Beads of syrup on the surface

Cause: Undissolved sugar, or sugar added too fast — Fix: Add sugar a spoonful at a time once the whites hold a soft peak, and keep whisking after the last addition until a pinch feels completely smooth. Caster, never granulated.

Weeping liquid underneath

Cause: Overwhisked whites, or the meringue sat before baking — Fix: Stop at stiff, glossy peaks that still slump slightly rather than looking dry and grainy, and get the tray into the oven straight away.

Browning rather than staying white

Cause: Oven too hot — the sugar is caramelising — Fix: Drop to 100°C. If your oven cannot go that low reliably, prop the door slightly with a wooden spoon and use an oven thermometer, because most domestic ovens read several degrees out.

Questions people ask

Is a chewy meringue wrong?

Not at all — a pavlova is supposed to have a marshmallow centre, and that is a design feature achieved with cornflour and acid. It is only a fault when you wanted crisp and got chewy, which means the drying was cut short.

Can I use granulated sugar?

Not for a crisp meringue. The crystals are too large to dissolve fully in the time available and the undissolved sugar syrups out during baking. Caster dissolves properly; icing sugar can be used for part of the weight for a very fine texture.

Why did my meringues crack?

Cracking is a temperature shock — either an oven that was too hot to begin with, or a meringue moved into cool air while still warm. Cracks are cosmetic and do not affect the texture, but the fix is a lower oven and cooling inside it.
