Why did my meringue weep or collapse?

Short answer
Weeping is undissolved sugar or undercooked meringue; collapse is usually under-whipping or a trace of fat. Add sugar slowly, make sure the bowl is spotlessly grease-free, and cool it in a switched-off oven rather than pulling it out.
Meringue is egg white protein holding air, stabilised by sugar. Almost every failure traces back to one of three things: fat in the bowl, sugar added too fast to dissolve, or a temperature change that was too abrupt.

Step by step
- Start with a genuinely grease-free bowl.Wipe it with lemon juice or vinegar and dry it. Any fat — including a speck of yolk — prevents the whites reaching full volume. Glass or metal, never plastic, which holds grease.
- Separate eggs cold, whip them at room temperature.Cold yolks are firmer and less likely to break into the whites. Room-temperature whites whip to greater volume.
- Whip to soft peaks before adding any sugar.Adding sugar too early limits the volume you can reach.
- Add sugar very gradually.A spoonful at a time, whipping between. This is the single biggest cause of weeping — undissolved sugar draws out moisture and forms syrupy beads.
- Check the sugar has dissolved.Rub a little between finger and thumb. Any grittiness means keep whipping. It should feel completely smooth.
- Bake low and slow.Meringue is dried rather than baked. A low oven for a long time. Too hot and the outside sets and cracks while the inside stays wet.
- Cool it in the switched-off oven.Turn the oven off and leave the door slightly ajar. A sudden temperature drop is what causes most cracking and collapse.
- Keep it away from humidity.Meringue absorbs moisture from the air and softens. Store airtight, and avoid making it on a very humid day if you can.
Tips
- A little cream of tartar, lemon juice or vinegar stabilises the foam and gives real insurance against over-whipping.
- Caster sugar dissolves far more readily than granulated. It is worth using the right one here.
- Over-whipped meringue looks grainy and separates. There is a window past stiff peaks where it starts to break down.

- Adding all the sugar at once — It cannot dissolve, and undissolved sugar draws moisture out and weeps as syrup beads.
- Opening the oven door during baking — The temperature drop cracks and collapses the structure before it has set.
If it doesn't work
Syrupy beads on the surface
Cause: Sugar added too quickly and not fully dissolved — Fix: Next time add it a spoonful at a time and test by rubbing between your fingers before baking.
Liquid weeping underneath
Cause: Undercooked, or a pie filling that was cold when the meringue went on — Fix: Bake longer at a low temperature, and spread meringue onto a hot filling so the underside sets.
Will not whip to stiff peaks
Cause: Fat in the bowl or a trace of yolk — Fix: Start again with a spotless bowl. This cannot be rescued once fat is present.
Cracked and collapsed on cooling
Cause: Oven too hot, or cooled too suddenly — Fix: Lower the temperature and cool it in the switched-off oven with the door ajar.
