Is a scratched non-stick pan safe to use?
What actually happens when a non-stick coating is scratched, why swallowed flakes are not the concern, and the overheating risk that genuinely is.

Short answer
Swallowed PTFE flakes are inert and pass straight through — that is not the risk. The risks are that a scratched pan no longer works, that the exposed metal beneath can react, and above all that any PTFE pan overheated empty gives off fumes. A few light scratches: keep using it at moderate heat. Flaking, blistering or bare metal showing: replace it.
This question gets answered badly in both directions — either 'you are poisoning your family' or 'it is completely fine'. The accurate position is narrower than either: the coating itself is very stable and inert at cooking temperatures, and the hazard lives at the top of the temperature range rather than in the scratches.

- Know what the coating is.Most non-stick is PTFE, a fluoropolymer. It is chemically extremely stable and biologically inert at normal cooking temperatures — it does not react with food, it is not absorbed, and pieces that come off pass through the gut unchanged. That is why a swallowed flake is not the thing to worry about.
- Understand the real hazard: heat, not damage.PTFE begins to break down above roughly 260°C and releases fumes that cause temporary flu-like symptoms — sometimes called polymer fume fever. Pet birds are extremely sensitive and can die from it. An empty pan on a high hob ring reaches that in a couple of minutes, which is why the rule is never to preheat non-stick empty.
- Note that PFOA is a separate and largely historical issue.PFOA was a processing chemical used in making the coating, not part of it. It has been phased out of cookware manufacture in the UK and EU for well over a decade. A pan bought new in recent years is not a PFOA question; a pan from the 1990s in the back of a cupboard is a reasonable one to retire on other grounds anyway.
- Judge the pan by how it looks and works.Fine surface scratches and dull patches with the coating intact: still usable, at moderate heat, with the understanding that its life is shortening. Coating visibly flaking, blistering, peeling at the edges, or bare metal showing through: replace it. The coating is no longer doing its job and the substrate underneath is exposed.
- Know what the exposed metal means.Under the coating is usually aluminium. Bare aluminium in contact with acidic food reacts, pitting the metal and putting a metallic taste into the food. That is a much better reason to retire a badly scratched pan than the coating fragments are.
- Change the habits that scratch it.Wood, silicone or nylon utensils only. No metal, no whisks, no knives cutting in the pan. Do not stack pans without a cloth or a pan protector between them. Hand wash — dishwasher detergent is abrasive and degrades the coating far faster than washing up does.
- Keep it off high heat permanently.Non-stick is a low-to-medium heat surface. Anything you want a hard sear on — steak, a smoking-hot stir-fry — belongs in stainless, cast iron or carbon steel. Using non-stick within its range is what makes it last several years rather than one.
Tips
- If you keep birds, move them out of the kitchen entirely or stop using PTFE cookware. This is not a theoretical risk and it happens at temperatures an ordinary hob reaches easily.
- A non-stick pan that has stopped releasing food is often not worn out but coated in polymerised oil residue. Boil water with a little washing-up liquid in it for ten minutes, cool, and scrub gently with a soft sponge before writing it off.
- Air fryer baskets and non-stick bakeware are the same coating and the same rules. Do not scrub them with wire wool or run them at maximum heat empty.
- Non-stick has a finite life measured in a few years of regular use. Buying a mid-priced pan and replacing it when it wears out is a more realistic plan than expecting an expensive one to last forever.

- Preheating an empty non-stick pan on high while you get the food ready — With nothing in it to absorb the heat, the surface climbs past 260°C within a couple of minutes. This is the one thing that genuinely produces fumes.
- Continuing to use a pan whose coating is flaking off in sheets — It has failed. The food sticks, bare aluminium is exposed to acids, and the flakes end up in the food — harmless but not something anyone wants to serve.

I swallowed a flake of non-stick coating — should I worry?
No. PTFE is inert and passes through the digestive system unchanged. It is worth taking as a signal that the pan needs replacing, but not as a health incident.
Is a scratched air fryer basket safe?
The same answer applies: light scratches are cosmetic, flaking coating means replace the basket or the machine. Do not use metal tongs or knives inside the basket, and do not scrub it with anything abrasive.
Are ceramic non-stick pans safer?
They contain no PTFE, so the overheating fume issue does not apply. In exchange they usually lose their non-stick properties considerably faster. Safety is not really the deciding factor between them — longevity is.
