Ceramic or PTFE non-stick — which lasts better?

Ceramic non-stick is sold as the safer, greener alternative to PTFE — here is what the two coatings actually are, how long each lasts in real use, and which to buy for what.

Short answer

PTFE is a plastic film that stays slippery for a few years if you keep it off high heat and away from metal utensils. Ceramic is a sol-gel silica coating that starts more slippery and typically loses it within one to two years, faster if overheated. For a pan you will use daily, PTFE lasts longer. Ceramic makes sense if you want no fluoropolymers or you cook at higher temperatures.

The names are misleading. Ceramic non-stick is not pottery, and PTFE non-stick is not one product — both are thin applied coatings on an aluminium pan, and the difference in how they wear out is more useful than the difference in what they are made of.

Step by step

  1. Know what each coating is.PTFE is a fluoropolymer sprayed and baked on in layers — the same family as the original Teflon. Ceramic is a silica-based sol-gel, sprayed and cured, chemically closer to glass. Neither is applied thickly; both are a surface on aluminium.
  2. Compare initial performance.A new ceramic pan is usually the more slippery of the two, and it looks and feels excellent for the first few months. A new PTFE pan is very good and slightly less dramatic.
  3. Compare how they age, which is the real difference.Ceramic coatings lose their release properties as the surface gradually develops microscopic cracks and absorbs polymerised oil — typically noticeable within a year of daily use. PTFE degrades more slowly and more gracefully, keeping usable release for several years if it is not scratched or overheated.
  4. Compare heat tolerance.Ceramic tolerates higher temperatures without releasing anything, and can generally go in an oven at higher settings. PTFE must stay below about 260°C, which means never preheating it empty. If you want a coated pan you can be less careful with on heat, ceramic has the edge.
  5. Compare the chemistry question.PTFE is inert at cooking temperatures and PFOA is no longer used in manufacture in the UK and EU, so the practical concern with PTFE is overheating rather than the coating itself. Ceramic contains no fluoropolymers at all, which is the reason many people choose it. Both are safe used within their limits.
  6. Treat both the same way in the kitchen.Wood, silicone or nylon utensils. Hand wash, no dishwasher. Medium heat, oil or butter in the pan rather than dry. No stacking without protection. Both coatings die of the same three things — metal utensils, dishwashers and high dry heat — and both last far longer when those are avoided.
  7. Buy accordingly.Everyday egg-and-pancake pan you will use several times a week: PTFE, mid-priced, replaced when it wears out. A pan you want to take to higher temperatures or a household that would rather avoid fluoropolymers: ceramic, accepting a shorter slippery life. For searing and long acidic cooking, neither — use stainless or iron.

Alternatives

  • Seasoned carbon steel: Becomes genuinely non-stick with use, costs less than a good coated pan, tolerates any heat and lasts decades. Needs drying and oiling and dislikes acid.
  • Stainless steel: No coating to wear out at all, dishwasher safe, and food does not stick if the pan is properly hot and there is enough fat. Steeper technique curve for eggs and fish.
  • Enamelled cast iron: No seasoning, no coating to scratch off, handles acid, lasts a lifetime. It is not non-stick and it is heavy.

Questions people ask

Is ceramic non-stick healthier?

It contains no fluoropolymers, which is the reason most people choose it. PTFE is inert at cooking temperatures and its practical risk is overheating rather than ordinary use. Both are considered safe within their limits — this is a preference question more than a safety one.

Why did my ceramic pan stop being non-stick after six months?

That is the normal failure mode. The coating develops fine cracks and takes up polymerised oil, and release falls away. Washing gently, avoiding aerosol cooking sprays and keeping the heat down slows it but does not prevent it.

Can I restore a non-stick pan that has stopped working?

Sometimes. A layer of burnt-on oil residue looks like a dead coating and is not — simmer water with a squeeze of washing-up liquid for ten minutes, cool, and wipe with a soft sponge. If the surface underneath is scratched or crazed, it is genuinely worn out.
