Why is my pizza base soggy?

Short answer

Preheat a tray or stone until it is genuinely hot and slide the pizza straight onto it. A cold tray means the base steams while the top cooks, which is exactly what soggy is.

Pizza ovens work at temperatures a domestic oven cannot reach, so the base cooks in seconds. At 240°C the base needs several minutes, during which moisture from the toppings soaks into it. Everything below either adds bottom heat or removes moisture.

Step by step

  1. Preheat a stone or heavy tray for at least 30 minutes.At the oven's maximum temperature. The stored heat is what cooks the base fast, and 30 minutes is a minimum for it to fully saturate.
  2. Use the highest temperature your oven has.240°C or more. Pizza is one of the few things where a domestic oven's maximum is genuinely the right setting.
  3. Use less sauce than feels right.A thin layer, leaving a border. Sauce is the main source of moisture and most people use two or three times too much.
  4. Drain wet toppings.Fresh mozzarella especially — tear it and let it drain on kitchen paper first. Mushrooms, tomatoes and courgettes all release water; cook them first or slice them thinly.
  5. Do not overload it.More topping means more moisture and more insulation from the heat. Restraint is the difference.
  6. Cook near the bottom of the oven.Bottom heat is the constraint. The lowest shelf, or the oven floor if yours allows it.
  7. Slide it on with semolina, not flour.Semolina on the peel or board acts like ball bearings and does not burn. Flour sticks and scorches.
  8. Add delicate toppings after baking.Rocket, prosciutto, fresh basil and soft cheeses go on after. They wilt or release water in the oven and add nothing while cooking.

Tips

  • A cast iron pan or an upturned heavy baking tray preheated in the oven works nearly as well as a pizza stone.
  • Par-baking the base for a few minutes before topping it is a reliable fix if nothing else works.
  • Fresh mozzarella is the biggest single source of moisture. Drain it, or use a firmer low-moisture cheese.

Do I need a pizza stone?

It helps, but a heavy baking tray or a cast iron pan preheated at maximum temperature for half an hour achieves most of the same effect.

Why is my pizza wet in the middle?

Too much sauce or wet toppings, and not enough bottom heat. Drain the mozzarella, use less sauce, and preheat the tray properly.
