Short answer
Blind bake the case, then seal it with beaten egg white and return it to the oven for two minutes. That thin waterproof layer is what stops the filling soaking in.
A soggy bottom is wet filling meeting under-cooked pastry. Two separate fixes: cook the pastry before the filling goes in, and put a barrier between them.
What you'll need
- Pastry case
- Baking beans or rice
- Baking paper
- Egg white
- Metal tin (optional)
Step by step
- Chill the lined case before baking.Twenty minutes in the fridge or ten in the freezer. Cold pastry holds its shape and does not slump down the sides.
- Blind bake properly.Baking paper right into the corners, filled to the top with beans or rice. Underfilling lets the sides collapse. 180-190°C for about 15 minutes.
- Remove the beans and bake again.Another 5-10 minutes uncovered until the base looks dry and sandy rather than shiny. This second stage is the one people skip.
- Seal it with egg white.Brush the hot base with beaten egg white and return for two minutes. It sets into a thin waterproof layer — the single most effective step here.
- Use a metal tin, not ceramic or glass.Metal conducts heat to the base far better. Ceramic dishes look nicer and produce soggier bottoms.
- Preheat a baking tray and cook on it.Direct bottom heat straight into the base of the tin. It makes a substantial difference in a domestic oven.
- Cook wet fillings down first.Fruit, mushrooms, leeks, onions all release water. Cook them and let them cool before they go into the case.
- Bake in the lower part of the oven.Bottom heat is what you are short of. Ovens are hotter at the top, which is the opposite of what a pastry base needs.
Tips
- Rice works as well as ceramic baking beans and costs nothing. Keep a labelled jar for the purpose — it can be reused indefinitely but not eaten afterwards.
- For a very wet filling, a scattering of semolina or fine breadcrumbs on the base absorbs moisture without being noticeable.
- If the edges brown before the base is done, cover just the rim with foil.
Questions people ask
How do I stop a soggy bottom?
Blind bake fully, then brush the hot base with egg white and return it for two minutes. That seal, plus a metal tin on a preheated tray, deals with nearly every case.
Can I skip blind baking?
Only for fillings that cook quickly and are not wet. For anything liquid or long-cooking, the base will not cook through once it is covered.
