Which meat thermometer should I buy, and where do I probe?
The four types, what speed and accuracy actually buy you, the ice-water check that verifies any of them, and where the probe goes in each kind of joint.

Short answer
Buy a fast digital instant-read for everyday cooking — two to four seconds, thin tip, a stated accuracy around half a degree. Add a leave-in probe with an alarm if you roast large joints often. Skip dial bimetallic thermometers, which are slow and read an average over a long stem. Check any of them in ice water before you trust it.
A thermometer is the only instrument in meat cookery that gives you evidence rather than an impression. Which one you buy matters less than owning one at all — but the differences between the types are real and they show up in the way you cook.

- Know the four types.Digital instant-read: a folding or pen-shaped probe you insert briefly. Leave-in probe: a wired or wireless sensor that stays in the meat with the display outside the oven. Wireless smart probe: fully cordless, sits in the joint, reports to a phone. Dial bimetallic: the old analogue kind with a needle and a thick stem.
- Buy for speed and tip thickness first.A good instant-read settles in two to four seconds; a cheap one takes fifteen to thirty, during which you are holding an oven door open and guessing whether the number has stopped moving. A thin tip — around 2mm — reads a smaller volume, so it finds the actual coldest point rather than averaging across a centimetre.
- Treat stated accuracy sensibly.Around ±0.5°C is what a good instant-read claims and it is plenty. ±2°C sounds acceptable until you remember the whole difference between rare and medium is about six degrees. Repeatability matters as much as absolute accuracy — a thermometer that is consistently one degree low is easy to live with.
- Add a leave-in probe if you roast often.Its real value is not accuracy but not opening the oven. You watch the curve, you get an alarm at your pull temperature, and the oven stays at temperature throughout. For a long roast, a turkey or an overnight shoulder, it changes how relaxed the whole thing is.
- Check it in ice water before you rely on it.Fill a glass with crushed ice, top up with cold water, stir and let it sit a minute. The probe should read 0°C, give or take half a degree, held in the water without touching the sides. This takes two minutes and it is the only way to know your thermometer is telling the truth. Do it when you buy it and again if it has been dropped.
- Probe the thickest part, away from bone and fat.Bone conducts heat and reads high; a fat seam reads differently from muscle. Push the tip into the deepest muscle and, if you have a fast probe, pull it slowly back out through the meat watching the number — the lowest reading you pass through is the true coldest point. That technique is more useful than any single insertion.
- Learn the placement for each shape.Whole bird: the thickest part of the thigh from the side, not touching the joint bone, plus the deepest part of the breast. Leg of lamb: horizontally into the thickest muscle from the side, avoiding the bone. Rolled joint: from the end, along the axis, into the centre. Steak or chop: from the edge, horizontally, so the tip is in the middle of the thickness. Sausages and burgers: from the end or the side into the geometric centre.
- Take more than one reading.Joints are not uniform. Two or three readings in different places and trusting the lowest one is the habit that prevents an under-done patch, particularly in poultry and in anything that has to be cooked through.
Tips
- Not all thermometers are oven-safe. Instant-reads generally are not — the electronics are in the handle. Only leave a probe in the oven if it is designed for it.
- Infrared thermometers read surface temperature only. They are useful for a pan or a pizza stone and useless for a joint of meat.
- A thermometer with a backlight and a rotating display is worth the small premium if you ever cook on a barbecue after dark.
- Wash the probe between uses on raw and cooked food. It has been in the raw centre of a joint; it is a cross-contamination route like any other.
Common mistakes
- Buying the cheapest digital probe available — The savings come out of speed and tip thickness, which are exactly the two things that make a thermometer useful. A slow thick-tipped probe encourages guessing.
- Leaving the probe tip against a bone — Bone heats faster than the surrounding muscle, so the reading comes out several degrees high and the joint comes out underdone.
- Never checking calibration — Probes drift and get damaged. A thermometer three degrees out is worse than none, because it produces confident wrong decisions.
Alternatives
- Digital instant-read: The single most useful one to own. Fast, thin-tipped, works on everything from a steak to bread to oil. Not oven-safe.
- Wired leave-in probe: Cheap, reliable, and lets you watch a roast without opening the oven. The cable through the door seal is the weak point.
- Wireless smart probe: No cable, works in a barbecue or a rotisserie, and predicts finish times. Expensive, and the batteries and app are additional failure points.
- Dial bimetallic: Slow, imprecise and averages across the whole length of the stem, so it cannot find a centre reading in a thin cut. Cheap and needs no batteries; that is all.
Questions people ask
Can I check a thermometer in boiling water instead?
You can, but it is less reliable, because water boils below 100°C at altitude and the temperature varies with atmospheric pressure. Ice water is a fixed point that does not care where you live, so it is the better check. If you do use boiling water, expect roughly 100°C at sea level and hold the probe in the water, not against the pan.
Do I really need one if I have cooked meat for years without?
For whole-muscle beef and lamb, experience and the touch test get you a long way. For poultry, mince, burgers, sausages, rolled joints and pork, judgement is not evidence and the consequences of getting it wrong are a food-borne illness. That is the case for owning one.
