Air-dry clay, polymer clay or kiln clay — which do I need?

Three materials sold in the same aisle that share almost nothing except the word clay. What each can and cannot do, and the two questions that decide between them in seconds.

Short answer

If it must hold water or food, only kiln-fired and glazed clay will do. If it is small, handled and needs fine detail or bright colour, use polymer clay, which cures in a domestic oven. If it is decorative and you want no equipment at all, air-dry clay is fine — but it is porous, not durable, and it softens if it gets wet.

The disappointment people report with clay is almost always a mismatch: a mug made from air-dry clay that dissolved, a polymer clay bowl that cannot go near hot food, an ambitious pot in stoneware with no way to fire it. Choosing the material for the object rather than for the price avoids all of it.

Safety

Dry dust from kiln clay contains crystalline silica, which causes permanent lung damage with repeated exposure. Never sweep or vacuum dry clay with a domestic vacuum — clean up wet, with a sponge, every time. Polymer clay must be cured at the temperature the manufacturer states; above it, it scorches and gives off irritant fumes. No clay of any kind is food safe unless it has been fired and glazed with a food-safe glaze.
Choosing between air-dry, polymer and kiln clay

Step by step

  1. Start with the only question that has a hard answer.Does it need to hold water, or hold food? If yes, the answer is fired and glazed clay and nothing else. Air-dry clay is porous and sealants are not a reliable substitute. Polymer clay is not food safe and softens with heat.
  2. Understand what kiln clay is.Earthenware, stoneware or porcelain. Worked wet, dried slowly, fired once to bisque, glazed, then fired again. It produces genuinely durable, watertight, food-safe objects and it requires access to a kiln, which most people rent from a studio rather than own.
  3. Understand what polymer clay is.A PVC-based modelling material that cures hard at a low temperature in a domestic oven. It comes in strong colours that can be blended, takes very fine detail, and is strong at small scale. It is not clay in any meaningful sense and it is not food safe.
  4. Understand what air-dry clay is.A clay or clay-substitute with a binder that hardens as the water leaves. No equipment at all. It is the cheapest way to learn how to shape clay, and the result is porous, chalky, brittle at thin sections and permanently vulnerable to water.
  5. Match the material to the size of what you are making.Polymer clay is strong at jewellery and figure scale and fragile in large thin pieces. Air-dry clay is workable at any size and weak at all of them. Kiln clay is the only one that gets stronger the larger and thicker the piece.
  6. Factor in the equipment honestly.Air-dry: nothing. Polymer: an oven, a tile, an oven thermometer and a dedicated work surface. Kiln clay: a working surface you can wet-clean, and an ongoing relationship with a studio for firing.
  7. Consider what you want to learn.If the aim is to learn pottery, use real clay from the start, because air-dry clay behaves differently and teaches habits that do not transfer. If the aim is to make small coloured objects, polymer clay is its own craft, not a stepping stone.
  8. Do not believe waterproofing claims on packaging.Air-dry clay sealed with varnish resists splashes and is still not watertight, not dishwasher-safe and not food safe. A sealed air-dry mug will fail, and the failure is usually the handle coming off in someone's hand.

Tips

  • Studios and colleges run pottery courses where the clay, the tools and the firing are all included. For anyone unsure whether they want to commit, that is far cheaper than buying equipment.
  • Polymer clay has a shelf life in the sense that it hardens in the packet over years. Old crumbly blocks can usually be rescued with a softener, but very old clay may not.
  • Air-dry clay is excellent for children and for prototyping a shape before committing it to real clay, which are its two genuine strengths.

Common mistakes

  • Making a mug or a bowl from air-dry clay — It is porous, so it absorbs liquid, softens, and grows mould inside the body. The handle joint is the usual failure point and it fails while full.
  • Buying stoneware clay with no plan for firing it — Unfired clay is not a finished object — it is still clay, and it will crumble or dissolve. Sort out the kiln access before buying the clay.
  • Treating polymer clay as oven-bake pottery — It is a plastic. It is not food safe, it softens with heat, and it will not survive being used as tableware, however well cured.
  • Vacuuming up dry clay dust — A domestic vacuum passes the fine fraction straight through the filter and puts it into the air of the room. Silica dust causes irreversible lung disease and wet cleaning removes the risk entirely.

Alternatives

  • Paper clay: Clay with paper fibre added. Much lighter, far more crack resistant, joins to dry clay in a way ordinary clay does not, and available in both air-dry and firing versions. Excellent for sculptural work.
  • Epoxy putty and two-part modelling putties: Cure hard by chemical reaction, take fine detail, and are extremely strong. Used for sculpting and repairs rather than pottery, and expensive per gram.
  • Plasticine and non-hardening clays: Never set at all. For learning to shape, for stop-motion, and for making a form to cast from. Nothing you make is permanent.

Questions people ask

Can I fire clay in a domestic oven?

No. A kitchen oven reaches a few hundred degrees and stoneware needs well over a thousand. There is no home workaround. Studio and community kilns fire other people's work for a fee, and that is the normal route.

Is air-dry clay ever fireable?

Some air-dry clays are ordinary clay with a binder and can be fired; many are not, and firing one that contains synthetic fibres or binders can damage a kiln. Never put unknown air-dry clay in someone else's kiln — ask them first.

Which is best for children?

Air-dry clay for shaping and painting, because there is no oven stage and nothing to go wrong. Polymer clay is fine with an adult doing the baking, since the cure temperature has to be controlled.
