Why is my chicken still pink near the bone?

Short answer
Pink meat close to the bone is usually harmless pigment from the marrow, not undercooking — it happens most with young birds and frozen ones. Verify with a thermometer: 75°C in the thickest part means it is cooked whatever colour it is.
Two different things get called pink chicken. One is undercooked meat, which is a genuine risk. The other is a pigment reaction around the bone that survives full cooking, and telling them apart is what this comes down to.

Step by step
- Measure the temperature rather than judging the colour.Probe the thickest part, away from bone. 75°C is the UK figure for poultry. This is the only test that settles the question.
- Recognise marrow pigment.A pink or reddish tint in the meat immediately against the bone, sometimes with dark marrow visible. It comes from haemoglobin leaching out of the bone and it does not disappear with more cooking.
- Expect it in young and frozen birds.Young chickens have porous bones that leak pigment readily. Freezing ruptures cells in the marrow, so a bird that has been frozen is far more likely to show it.
- Check the texture as well.Cooked chicken is firm and opaque and pulls away from the bone. Undercooked chicken is soft, slightly translucent and jelly-like. Texture distinguishes the two better than colour does.
- Check the juices.Pierce the thickest part. Clear juices with no cloudiness suggest it is done. Pink, cloudy or bloody juices mean it needs longer.
- Know that pink can happen with no bone involved.Nitrates in some feed and brines, and gas ovens and barbecues, can leave a pink ring in fully cooked poultry. Again, temperature is the arbiter.
- Put it back if you are unsure.Ten more minutes at 190°C costs you very little. Salmonella and campylobacter cost a great deal more.
- Buy a probe thermometer.They are inexpensive and remove this question permanently. It is the single most useful piece of kit for cooking meat at home.
Tips
- Never use colour as the test for poultry. It fails in both directions — pink cooked chicken and pale undercooked chicken both exist.
- Frozen-then-thawed birds show marrow pigment far more often. It is not a sign of anything wrong.
- Probe away from bone. Bone conducts heat and gives a falsely high reading.
Common mistakes
- Cooking a whole chicken far longer to remove the pink — Marrow pigment does not go away with heat, so you dry the whole bird out chasing something that was never a safety problem. Check the temperature instead.
- Assuming pale chicken is cooked — Chicken can look entirely white and still be below 75°C in the thickest part of the thigh, which is where it takes longest. Pale is no more informative than pink.

Cause: Nitrogen dioxide from combustion — Fix: Harmless if the temperature is right. Check with a probe.
Thighs pink, breast dry
Cause: Uneven cooking of a whole bird — Fix: Spatchcock it, or cover the breast with foil partway through so the thighs catch up.
