Why has my pan warped, and can it be fixed?
A pan that rocks, spins on the hob or lets the oil run to one edge has gone out of flat — what causes it, how to test it with a straightedge, and which warps can be corrected.

Short answer
Warping is thermal shock: a thin base heated hard, especially empty, then cooled fast, so one face contracts more than the other and takes a set. Test it by laying a straightedge across the base and looking for light underneath. A mildly domed thin aluminium pan can sometimes be tapped flat; a bonded multi-layer base or cast iron cannot be corrected.
A warped pan is a real cooking problem rather than a cosmetic one. Oil pooling at the rim means the middle of the food is not touching hot metal, and a domed base on an induction hob may not even be detected. Knowing which way it has gone tells you both the cause and whether anything can be done.
Step by step
- Test with a straightedge.Lay a ruler, a spirit level or the back of a long knife across the base and hold the pan up to a window. A flat base touches all the way along with no light underneath. If the straightedge rocks on a high centre point, the base is convex — domed downward. If it rests on the two edges with a gap in the middle, it is concave — dished upward.
- Identify a domed base by how it behaves.It spins or rocks on a glass or induction hob, only a small ring of metal touches the surface, and food burns in a circle in the middle while the rest stays pale. On induction the contact area may be too small for the hob to detect the pan at all, or it will detect it and cycle on and off.
- Identify a dished base by where the oil goes.Oil runs away from the centre and pools around the rim, and the middle of the pan is a cold spot that never browns anything. An egg cracked into it spreads into a ring. This is the more common warp in thin frying pans.
- Understand the cause so it does not happen again.Thin metal, heated hard — often empty, preheating, or over a ring much smaller or larger than the base — and then cooled suddenly, typically by running a hot pan under the tap or dropping it into washing-up water. One face contracts faster than the other and the metal takes a permanent set. Repeated mild cycles do it gradually.
- Attempt a repair only on a single-layer pan.A thin aluminium or stainless single-sheet pan with a mild dome can sometimes be persuaded back. Put it upside down on a solid flat surface, place a block of wood over the high point, and tap the wood with a mallet — light taps, checking with the straightedge frequently. It is a salvage job and it may not fully work.
- Accept that most warps cannot be fixed.A bonded or clad base — a disc of aluminium sandwiched between steel layers, which is what most decent modern pans have — has different metals that have moved by different amounts, and hammering separates the layers. Cast iron cracks rather than bends. Non-stick coating flakes when the base is worked. In these cases the pan is finished for hob use.
- Repurpose a warped pan rather than binning it.A warped pan still works in the oven, where contact with a flat surface does not matter, and as a roasting or serving dish. Metal pans are recyclable at a household waste recycling centre; non-stick ones usually need the general scrap metal skip rather than kerbside collection.
Tips
- Never run a hot pan under the cold tap. This is the single most common cause, and it also cracks enamel and destroys non-stick.
- Match the pan base to the hob ring. A base much wider than the ring gets a hot centre and cool edges, which is exactly the stress pattern that domes it.
- Do not preheat an empty thin pan on high. If a recipe wants a very hot pan, use a thick heavy one, or add the oil at the start so there is something to absorb the heat.
- On induction, a pan that buzzes, rattles or cuts in and out is often warped rather than faulty — check it with a straightedge before blaming the hob.
Questions people ask
Is it safe to cook in a warped pan?
Yes, it is a performance problem rather than a safety one — unless it is so unstable on the hob that it rocks or slides, which with hot oil in it is genuinely dangerous. A pan that will not sit still should be retired.
Why does my new pan rock on an induction hob?
Sometimes it is warped from the factory, and it is worth returning under warranty in the first weeks. More often it has been shocked once — a hot empty preheat then a splash of cold water. Check it against a straightedge and return it if it is out of the box.
Do expensive pans warp?
Much less, because they have thick bonded bases with a lot of metal to resist the stress. They are not immune — nothing survives being taken to smoking point empty and then put under a cold tap.
