Why does my air fryer smoke or smell of plastic?
Smoke is nearly always fat reaching the element; a plastic smell on a new machine is curing, and on an old one it is not.

Short answer
Smoke means fat is hitting something hot — usually rendered fat pooling in the drawer or old residue baked onto the element above the basket. Add a tablespoon of water to the drawer under fatty food and clean the element area. A plastic or chemical smell on a brand-new machine is manufacturing residue and goes after two or three empty runs; the same smell on an established machine means stop and unplug it.
An air fryer puts a heating element a few centimetres above the food and blows air hard past it. Anything volatile — rendered fat, oil on the basket, residue on the element — is directly in the airstream and directly under the heat. That geometry is why air fryers smoke over trivial amounts of fat that an oven would ignore.

Step by step
- Decide first whether it is smoke or a smell.Visible white or blue smoke during cooking is fat. A chemical or plastic smell with no visible smoke is a different problem and is handled separately below.
- For smoke, look at the drawer under the basket.Fat renders out of bacon, sausages, chicken thighs and burgers, pools in the drawer, and is then heated well past its smoke point by the airflow. This accounts for most air fryer smoke and it happens with a perfectly clean machine.
- Add a tablespoon or two of water to the drawer.Water under the basket holds the pooled fat below its smoke point for the length of the cook. It is the standard fix for fatty food and it costs nothing. Do not fill it — a small amount is enough.
- Look up at the element above the basket.Splashes and vapour condense onto the element and the roof of the cavity and then carbonise. Unplugged and cold, wipe the element area with a barely damp cloth. Never soak it, never scrub it, and never immerse the body of the appliance.
- Check the oil you are using and how much.Extra virgin olive oil and butter have low smoke points and will smoke at air fryer temperatures. Use a high smoke point oil — rapeseed, sunflower, groundnut — and spray or brush it on the food rather than pouring it into the basket.
- Check nothing light is being blown into the element.A sheet of baking paper with nothing on it, a loose piece of food, or a lightweight silicone liner will lift into the element and smoke or burn. Anything you put in must be weighed down by the food itself.
- For a plastic smell on a new machine, run it empty.Manufacturing residues and coatings cure off. Run it empty at maximum for fifteen to twenty minutes, twice, with a window open. It should be gone after two or three ordinary cooks.
- For a plastic or electrical smell on an established machine, stop.That is a different signal entirely — overheating plastic, a failing fan bearing, or an electrical fault. Unplug it and do not use it. Air fryers are not economically repairable and this is a fault to retire the appliance over.
Tips
- Wash the basket and the crisping plate after every use. Baked-on residue is cumulative and it is what turns an occasional smoke into a regular one.
- Line the drawer with a little water rather than foil under fatty food. Foil can lift into the element and it stops fat reaching the drawer where the water would control it.
- If the machine smokes on the first use with something you have cooked before, the cause is residue rather than the food.
- Position the air fryer so its exhaust is not blowing straight at a wall unit or a smoke alarm. Both are common causes of complaints that are not really faults.
Common mistakes
- Using extra virgin olive oil at 200°C — Its smoke point is well below air fryer temperatures. The smoke is the oil breaking down and it tastes as bad as it looks.
- Loose baking paper in the basket — The airflow lifts it into the element within seconds. Paper in an air fryer must be perforated, cut to size, and held down by the food.
- Ignoring a chemical smell on an older machine — New machines cure off; established ones do not develop new smells for benign reasons. It usually means overheating plastic or an electrical fault.
If it doesn't work
White smoke while cooking fatty food
Cause: Rendered fat pooling in the drawer and passing its smoke point — Fix: Add a tablespoon or two of water to the drawer under the basket. Empty and wash the drawer between batches.
Smoke with clean, non-fatty food
Cause: Carbonised residue on the element or the cavity roof — Fix: Unplugged and cold, wipe the element area with a barely damp cloth. Do not soak or scrub.
Burning smell with something flapping inside
Cause: Loose paper, a liner or a light piece of food lifted into the element — Fix: Stop, unplug, and remove it once cool. Only use liners weighed down by food.
Chemical smell, brand new appliance
Cause: Manufacturing residue curing off — Fix: Two empty runs at maximum with a window open. Normal, and gone within a few uses.
Plastic or electrical smell on an established machine
Cause: Overheating plastic, fan or wiring fault — Fix: Unplug and stop using it. Not a fault to run through, and not economically repairable.
