What is the food danger zone and why does it matter?

The 8 to 63°C band, the two-hour rule, why the clock never resets, and what actually happens to food left out.

Short answer

Bacteria multiply fastest between 8 and 63°C, roughly doubling every twenty minutes near body temperature. Perishable food should spend no more than two hours total in that band across its whole life — one hour above about 32°C. Reheating does not undo the time, because some toxins survive cooking.

Almost every domestic food safety rule — cool it fast, get it in the fridge, reheat until steaming, do not leave rice out — is the same rule wearing different clothes. It is all about time spent between 8 and 63°C. Once you see that, the individual rules stop being arbitrary and start being obvious.

Time in the danger zone is cumulative and cannot be undone by reheating: some bacterial toxins survive cooking entirely.

Step by step

  1. Learn the two numbers that bound it.8°C at the bottom and 63°C at the top. Below 8°C bacterial growth is slow; above 63°C it stops and hot-holding is safe. In between, it accelerates, and it is fastest at around body temperature — which is why a lukewarm casserole is worse than a hot one or a cold one.
  2. Understand what doubling every twenty minutes means.A small population that would be harmless becomes a large one in a few hours. One bacterium becomes over a thousand in about three and a half hours at that rate. That is why the limits are stated in hours rather than days.
  3. Count the time cumulatively.The clock does not reset when food goes back in the fridge. Twenty minutes on the counter while you shopped, forty minutes cooling, an hour on the table and thirty minutes in a lunchbox is over two hours, spread across three days. Total time is what counts.
  4. Halve the allowance in hot weather.Above about 32°C ambient — a hot day, a car boot, a picnic in the sun — the limit becomes one hour. Warmer food gets into the fast part of the range sooner and stays there.
  5. Know where the household operations sit.The fridge at 0 to 5°C and the freezer at −18°C are outside the zone. Room temperature at about 20°C is inside it. A slow cooker on low sits above 63°C and is fine; a slow cooker switched off with food in it is not. A hot pot cooling on the hob passes straight down through the whole zone and takes hours to do it.
  6. Move food through the zone quickly in both directions.Cool hot food fast — shallow containers, cold water bath, lid off — rather than letting it drift. Reheat fast and thoroughly to 70°C for two minutes or 75°C in the centre. Defrost in the fridge, not on the worktop, so the outside is never in the zone while the middle is still frozen.
  7. Understand what freezing does and does not do.Freezing stops growth; it does not kill bacteria. Food comes out of the freezer as safe as it went in and no safer, and the clock starts again the moment it begins to thaw. That is the reason a slow worktop defrost is a problem — the surface is in the zone for hours.
  8. Accept that reheating does not buy time back.Heat kills most bacteria but does not destroy every toxin they leave behind. The emetic toxin Bacillus cereus produces in cooked rice left at room temperature is heat-stable, and so are the toxins from Staphylococcus aureus. Food that has been out too long is thrown away, not reheated.
  9. Be stricter for vulnerable people.Pregnant women, babies and young children, adults over 65 and anyone immunocompromised get ill from smaller doses and get more ill. Where you might personally take a marginal decision, do not take it on their behalf.

Tips

  • A fridge thermometer costs a couple of pounds and is the cheapest food safety improvement in a house. Many domestic fridges run warmer than their dial says.
  • The rule of thumb worth remembering: hot food hot, cold food cold, and as little time as possible in between.
  • Buffets and parties are where the two hours goes unnoticed. Put half out and keep the rest chilled, then swap.
  • Check food.gov.uk rather than relying on a remembered figure — the FSA is the authority for UK domestic guidance.

Common mistakes

  • Assuming food that smells and looks fine is fine — The organisms that cause food poisoning generally do not change how food smells, looks or tastes. Spoilage bacteria do, and they are mostly harmless. Judging safety by the senses gets the two backwards.
  • Treating the two hours as a limit per occasion — It is a lifetime total for that food. Repeatedly taking something out, using a bit and putting it back adds up quickly and is invisible unless you count it.

Questions people ask

Is food left out overnight safe if I boil it thoroughly?

No. Boiling kills the bacteria but does not destroy heat-stable toxins some of them will have produced during those hours. A pot of stew, rice, pasta or curry left out overnight goes in the bin regardless of how it looks and regardless of how thoroughly you reheat it.

Why is 8°C the number rather than 5°C?

5°C is the target a domestic fridge should run at, with 0 to 5°C the recommended range. 8°C is the temperature above which growth becomes significant and is used as the upper bound of chilled storage in UK food safety legislation. Aim for 5°C or below and treat 8°C as the point at which you are no longer in safe chilled territory.

What about food that is only out for a short time while I cook?

That is exactly what the two hours is for, and normal cooking fits inside it comfortably. The rule is not about being unable to leave butter on the counter — it is about the cumulative hours that build up when a dish is cooked, cooled slowly, left on a table and then packed for lunch.
