What is the difference between baking, roasting and grilling?
Same oven, different heat sources and temperatures — and why a recipe specifying one means it.

Short answer
Roasting is high dry heat for browning, baking is moderate heat for setting a structure, and grilling is intense heat from above for the surface only. The oven is the same; what it is doing is not.
These words get used interchangeably and they describe genuinely different processes. Knowing which one a dish needs explains a lot of otherwise mysterious recipe instructions.
Step by step
- Understand roasting.High dry heat, typically 180-220°C, all round. Used for meat and vegetables where you want browning and a crust. The high temperature is doing the browning.
- Understand baking.Moderate heat, typically 150-190°C, all round. Used where the food needs to set or rise — cakes, bread, pastry, custards. Gentler because structure matters more than surface.
- Understand grilling.Intense heat from directly above, very close. Used for the surface only — browning a topping, melting cheese, crisping skin. It cooks almost nothing through.
- Know when to grill rather than roast.When the inside is already cooked and only the surface needs work. Finishing a gratin, crisping crackling, browning a lasagne.
- Watch grilling constantly.The margin between browned and burnt is often under a minute. It is the one oven method that cannot be left.
- Use the right shelf position.Grilling needs the food close to the element. Roasting and baking want the middle, or lower for something that needs bottom heat.
- Know what a fan changes.A fan moves air, which speeds everything and evens out hot spots. Reduce a conventional recipe by about 20°C. It is particularly good for roasting and multiple trays.
- Recognise when a recipe means it."Bake at 180" and "roast at 220" are not interchangeable. A cake at roasting temperature burns outside and stays raw inside.
Tips
- Grilling is the most underused setting in most kitchens. It rescues soft crackling, browns a shepherd's pie and melts cheese in a minute.
- Most ovens grill with the door slightly ajar or closed depending on the model. Check the manual — it affects the result more than people expect.
- Roasting vegetables at too low a temperature is why they steam. If they are not browning, the oven is not hot enough.
