What do microwave power levels actually do?
A power level is a duty cycle, not a dimmer. The magnetron is either on at full power or off, and that single fact explains everything about how the settings behave.

Short answer
On nearly every domestic microwave the magnetron has two states: full power and off. Power level 5 means it runs about half of each roughly 20 to 30 second cycle. It does not produce gentler microwaves — it produces the same microwaves for less of the time, which is why a short burst at a low power level can do almost nothing.
People treat a microwave power level as a dial that turns the energy down, and then find that ten seconds on defrost achieves nothing while ten seconds on high melts the butter. The explanation is mechanical rather than mysterious, and once you know it, the settings become predictable and the wattage conversions become arithmetic.

- Accept the basic fact: the magnetron is a switch, not a dimmer.It either produces microwaves at the machine's full rated output, or it produces none. There is no intermediate state on a conventional domestic microwave, and the power level cannot change the intensity of what it emits.
- Read a power level as a percentage of time.P10 is on continuously. P7 is on about 70 per cent of each cycle. P5 about half. P3 about 30 per cent. The cycle length is typically 20 to 30 seconds, which is long enough that you can hear the magnetron cutting in and out if you listen.
- Work out why short bursts at low power do nothing.If the cycle is 30 seconds and you set 20 seconds at P3, the magnetron may run for as little as six of those seconds — and depending on where in the cycle it starts, possibly not at all. Low power needs long times to mean anything.
- Understand why the off periods are the point.During the off phase, heat conducts from the hot outer parts of the food into the cold middle. That is the same mechanism as standing time, applied continuously through the cook. It is why defrost works and why full power on frozen meat cooks the edges while the centre stays solid.
- Convert between machines with the same arithmetic.A packet written for 800W run in a 900W machine needs the time cut by roughly a ninth, or the power set to about P8 to hold the time. Times and power levels are interchangeable and the total energy is what you are matching.
- Choose the power level by what the food can tolerate.Liquids and reheating dense food: full power with a stir. Delicate proteins, sauces, cheese, chocolate and anything with fat that can split: P5 or lower, longer. Frozen food: P3 with rests. The rule is that anything which sets, splits or bubbles over wants time rather than power.
- Know when your machine is the exception.Inverter microwaves genuinely vary the magnetron output continuously rather than switching it. They defrost and simmer more evenly and do not have the short-burst problem. If yours is one, the specification will say so prominently.
Tips
- Listen to your microwave on P5. The change in tone as the magnetron cuts in and out is audible on most machines, and hearing it makes the whole idea concrete.
- If a recipe says medium, that is P5 or 50 per cent on nearly every machine, regardless of how many levels the panel offers.
- Ten levels versus five makes little practical difference. The useful settings are full, about half, and defrost.
- A microwave with a hidden minimum cycle time can behave oddly on very short low-power settings. If a job needs 15 seconds at P3, it usually needs 45 seconds at P1 instead, or a different method.
Common mistakes
- Assuming low power means gentle microwaves — It means the same microwaves for less of the time. The food still receives full-intensity bursts, which is why stirring during a low-power cook still matters.
- Using short times at low power — The duty cycle may not deliver any on time at all in a short window. Low power is a long-time setting by construction.
Questions people ask
Does defrost use less power than high?
It uses full power for a small fraction of the time. The average power over the cook is lower, which is what matters to the food, but the machine's peak draw is the same.
Why does my microwave sound like it is cycling?
Because it is. On any power level below maximum the magnetron switches on and off, and on most machines this is clearly audible as a change in pitch and volume every ten to twenty seconds.
Is an inverter microwave genuinely different?
Yes. It varies the microwave output continuously rather than switching, so low-power cooking is steady rather than pulsed. The practical difference is most obvious in defrosting and in anything that would otherwise cook at the edges.
