Does water temperature matter for coffee?

The range that matters, why boiling water is only a problem sometimes, and the free adjustments that work better than a temperature-controlled kettle.

Short answer

Water temperature is real but over-emphasised. It sits third behind grind size and ratio, and most temperature problems are actually extraction problems.

  1. Aim for 92 to 96°C.The generally accepted range for filter and cafetière brewing. In practice that is water left for around thirty seconds after boiling, or a minute in a cold room with a cold kettle.
  2. Understand what temperature changes.Hotter water extracts faster and pulls out more of everything, including the bitter compounds that come out last. Cooler water extracts less, leaving the sour, sharp acids that come out first.
  3. Fix the grind before the temperature.Grind size has a much larger effect on extraction than a few degrees. If the coffee is sour, grind finer; if bitter, grind coarser. Do that before buying anything.
  4. Check the ratio second.Around 60g of coffee per litre of water, or roughly 15g per 250ml cup. Weak coffee is usually under-dosed rather than under-extracted.
  5. Do not agonise over boiling water.Water straight off the boil is around 100°C, but it drops several degrees the moment it hits a room-temperature brewer and coffee. It is rarely the disaster it is described as.
  6. Preheat the brewer.A rinse of hot water through the cafetière, cone or cup, poured away. Cold equipment can pull the brew temperature down by several degrees, which matters more than the kettle does.
  7. Use cooler water for lighter roasts.Counter-intuitively, light roasts are denser and generally want the higher end of the range, around 94 to 96°C. Dark roasts are more soluble and do better a little cooler, around 88 to 92°C.
  8. Go cooler for very fine grinds.If you are brewing something finely ground, reduce the temperature slightly to compensate. Fine grind and very hot water together over-extract quickly.
  9. Remember espresso is different.Machines are typically set around 90 to 96°C, and the contact time is seconds rather than minutes. Espresso temperature is a machine setting, not a kettle decision.
  10. Ignore temperature entirely for cold brew.Cold brew extracts slowly at fridge temperature over 12 to 24 hours. It produces a completely different profile, low in acidity, and none of this applies.
  11. Use tea temperatures as a contrast.Green tea genuinely needs cooler water, around 70 to 80°C, and boiling water ruins it. Coffee is far more tolerant, which is why the fuss is disproportionate.
  12. Consider whether a variable kettle is worth it.Useful if you brew a lot, especially green tea and filter coffee. For most people, waiting thirty seconds after the boil achieves the same thing for nothing.
  13. Fix the water itself before the temperature.Hard water and heavily chlorinated water affect the cup far more than a few degrees. A simple filter jug is the bigger improvement in most of the UK.
  14. Change one variable at a time.Grind, then dose, then temperature. Changing all three leaves you unable to tell what helped.

  • Brewing into cold equipment — A cold cafetière or cup pulls several degrees out of the brew immediately, which is a larger drop than the difference people worry about in the kettle.

Cause: Over-extraction — water too hot, grind too fine, or brewed too long — Fix: Grind coarser first. If still bitter, let the kettle stand longer before pouring.

Coffee sour and thin

Cause: Under-extraction — water too cool or grind too coarse — Fix: Grind finer and preheat the brewer. Use water closer to the boil.

Weak but not sour

Cause: Not enough coffee — Fix: Increase the dose to around 60g per litre. This is a ratio problem, not a temperature one.

Tastes different in different houses

Cause: Water composition — Fix: Try filtered water. Hardness and chlorine change the cup more than small temperature differences.

First cup better than later ones

Cause: Kettle reboiled repeatedly — Fix: Reboiled water is fine chemically, but a fresh fill each time gives more consistent temperature and taste.
