How do I tenderise a cheap cut of meat?
The five things that genuinely make meat more tender, which of them work on which cut, and the popular methods that do very little.

Short answer
Tenderness comes from five levers: cutting fibres short, mechanical bashing, salt, alkali or enzyme treatment, and time at temperature to convert collagen. Which one to use depends on why the cut is tough — too much connective tissue needs hours of heat, while long tough fibres need slicing and salt.
Meat is tough for two completely different reasons, and the cures are opposites. Connective tissue needs long slow wet heat. Long, coarse muscle fibres need to be cut short and treated chemically, and long cooking makes them worse. Diagnosing which problem you have is most of the job.
Step by step
- Work out which kind of toughness you are dealing with.Cuts from the shoulder, leg, neck, belly and cheek are full of collagen from hard work and connective structure — brisket, shin, cheek, shoulder, shank. Cuts from the flank and skirt are tough mainly because they have coarse, long fibres. The first group needs hours; the second needs a knife and twenty minutes.
- Cut across the grain — the free and most effective step.Slicing at right angles to the fibre direction reduces the length of every fibre in the mouth to the thickness of the slice. On skirt, bavette, flank, brisket and rump this transforms the eating experience and costs nothing. Slice thin and slice across.
- Use salt properly and in advance.Salt dissolves some muscle protein and changes how the fibres hold water, so salted meat both retains more moisture and eats more tenderly. Salt at least 40 minutes ahead — ideally several hours, or overnight for a large joint. This is dry brining and it is the highest-value thing you can do to almost any cut.
- Bash it when the shape allows.A meat mallet, rolling pin or the base of a pan physically breaks fibres and connective sheets. It works well on thin cuts destined for fast cooking — schnitzel, minute steaks, escalopes — and it also evens out thickness so the whole piece cooks at once. It does nothing useful for a joint you intend to braise.
- Use alkali or enzymes with restraint.A little bicarbonate of soda raises the surface pH and stops proteins binding tightly; this is the velveting trick. Pineapple, papaya, kiwi and fresh ginger contain proteases that break protein down. Both work, and both go too far quickly — enzyme-marinated meat left overnight turns mushy and faintly mealy on the surface. Thirty minutes to two hours, no more.
- For collagen cuts, use time at temperature.Nothing else works. Collagen converts to gelatine steadily above roughly 70°C, and the rate is slow, so shin, cheek and brisket need three to six hours of gentle wet or covered heat. Adding acid, marinades or mallets to a brisket is wasted effort. The lever is hours.
- Buy the tenderness where it matters.If you want a fast-cooked tender steak with no work, that is what you are paying for in a fillet or sirloin. Cheap cuts are cheap because they need one of the levers above. Choosing the right cut for the method you have time for is the real skill.
Tips
- Blade tenderising — a jaccard, or a fork stabbed repeatedly — genuinely works, but it drives surface bacteria into the middle. Any needled or blade-tenderised steak must then be cooked through like mince, not served rare.
- Acidic marinades tenderise far less than their reputation suggests. They mostly affect the outer few millimetres and can make the surface chalky if left overnight.
- Freezing and thawing damages cell structure slightly and does marginally soften meat, but the moisture loss usually costs you more than the tenderness gains.
- Resting is not tenderising, but it is often mistaken for it — meat cut straight from the heat feels tougher because the fibres are still tightly contracted.
Common mistakes
- Slow cooking a lean cut hoping it will soften — Silverside, topside and loin have little collagen to convert. Hours of heat just squeezes the water out and makes them drier and more fibrous.
- Leaving meat in a pineapple or kiwi marinade overnight — Proteases keep working. The surface turns to paste while the middle is untouched, which is worse than the toughness you started with.
- Relying on a marinade to fix a braising cut — Marinades penetrate a few millimetres at most. A brisket needs internal collagen conversion, and only heat and time reach the inside.
Alternatives
- Mincing it: The most complete mechanical tenderiser there is. Any tough cut becomes tender as mince — but it must then be cooked thoroughly throughout, because mincing moves the surface into the middle.
- Sous vide: Holding a tough cut at 55–65°C for 24–48 hours converts collagen without ever taking the muscle above medium-rare. It is the one way to get a tender brisket that is still pink.
- Pressure cooking: Reaches around 120°C, which converts collagen in 30–60 minutes rather than hours. The texture is slightly different from a slow braise but the tenderising is real.
Questions people ask
Does adding bicarbonate of soda to a stew tenderise it?
Not usefully. It works as a short surface treatment on thin slices, where you can rinse it off. Stirred into a stew it affects flavour, turns the meat's colour and does little for tenderness that another hour of gentle cooking would not do better.
Is a supermarket 'tenderised' steak worth buying?
It has usually been blade or needle tenderised, which does soften it. The trade-off is that it can no longer be safely served rare, because the process carries surface organisms into the centre. Treat it as you would a burger and cook it through.
