How do I stop garlic burning?

Short answer
Add garlic after the onions, not with them, and cook it for thirty to sixty seconds only. Garlic has very little water and a lot of sugar, so it goes from fragrant to bitter in seconds — if it has browned past golden, start again.
Onions take eight minutes to soften. Garlic takes under a minute. Adding them at the same time is the single most common reason a dish has a harsh, bitter background note, and once garlic is burnt there is no way to season around it.
