Why do my burgers fall apart?

Usually the mince is too lean. Fat is what binds a burger as it renders, so anything under about 15% fat falls apart however carefully you handle it. Then: keep it cold, handle it as little as possible, and turn it once.

A burger holds together because of fat and protein, not because of anything added to it. Most collapsing burgers are a shopping decision rather than a technique problem, which is why adding egg and breadcrumbs rarely fixes them.

Minced beef must be cooked through — 75°C in the centre — because mincing spreads any surface bacteria throughout. That is different from a steak, where the inside is effectively sterile. A charred outside is not evidence of a cooked middle; use a thermometer, particularly on a barbecue.

Step by step

  1. Buy mince with enough fat.Around 20% fat, and not less than 15%. Fat renders and binds as it cooks, and it is where the flavour is. Extra-lean mince makes a dry burger that crumbles, and no technique compensates.
  2. Keep everything cold.Fridge-cold mince, cold hands, and back in the fridge for twenty minutes after shaping. Warm fat smears rather than staying in distinct pieces, and smeared fat does not bind.
  3. Handle it as little as possible.Form the patty with light pressure and stop. Working the mince develops the proteins into a springy paste — that produces a bouncy, sausage-textured burger rather than a crumbly one, but it is the other common failure.
  4. Do not compact it hard.A tightly packed patty shrinks and forces fat out. Loosely formed, just holding together, is right.
  5. Make a dimple in the centre.A thumbprint in the middle of the raw patty. Burgers dome as they cook and the dimple compensates, giving a flat burger that sits in the bun rather than a ball.
  6. Season the outside only.Salt mixed into the mince dissolves the proteins and makes the texture springy and sausage-like. Season the surface generously just before it goes in the pan.
  7. Get the surface properly hot.A hot pan or a hot grill so a crust forms immediately. That crust is structural — a burger placed on a lukewarm surface never sets and breaks up when moved.
  8. Leave it alone.Do not move, press or poke it. Let it release on its own, which it will once the crust forms. A burger that sticks is not ready to turn.
  9. Turn it once.Once, with a thin flexible fish slice slid right under it. Repeated turning gives the crust no chance to establish, and it is where most burgers break.
  10. Never press it with the spatula.It squeezes out the fat and juice that are holding it together and keeping it moist. This is the most common thing people do and it makes both problems worse.
  11. Consider a binder only for lean or non-beef mixes.Turkey, chicken and vegetable patties genuinely need help — egg, breadcrumbs or oats. A good beef burger needs none, and adding it changes the texture.
  12. Check the temperature rather than the colour.75°C in the centre. Colour is unreliable in minced beef, and undercooked mince is a genuine risk in a way undercooked steak is not.
  13. Rest briefly before serving.A couple of minutes. It firms up as it cools slightly, which makes it much easier to get into a bun intact.

Tips

  • Ask a butcher for chuck or brisket minced coarsely at around 20% fat. It is a completely different product from supermarket lean mince.
  • Shape them on a tray lined with baking parchment and chill them there. They lift off cleanly and hold their shape to the pan.
  • A flat, wide, thin burger cooks faster and holds together better than a thick one, and fits a bun properly.

Common mistakes

  • Using extra-lean mince — Fat is the binder. Below about 15% there is not enough to hold the patty together as it renders, and the result is dry as well as crumbly.
  • Pressing the burger with a spatula — It forces out the fat and juices doing the binding, so the burger becomes both drier and more likely to break.

Cause: Not enough fat, or turned before a crust formed — Fix: Use 20% fat mince, get the surface properly hot, and leave it until it releases on its own.

Bouncy, springy, sausage-like texture

Cause: Over-worked mince, or salt mixed in — Fix: Handle it as little as possible and season only the outside just before cooking.

Domed into a ball

Cause: Proteins contracting as it cooks — Fix: Press a thumb dimple into the centre of the raw patty.

Falls apart on the barbecue specifically

Cause: Grill bars not hot enough or not clean, so it sticks and tears — Fix: Heat the bars properly, clean and oil them, and let the crust form before attempting to move it.
