Short answer

Lay a damp cloth or a sheet of damp kitchen roll flat under the board. It grips instantly, costs nothing and works better than most bought solutions. If the board still moves, it is warped and needs replacing.

Almost every professional kitchen does the same thing, and it takes three seconds. A sliding board is not a minor irritation — it is the thing that turns a slip of the knife into a cut.

Safety

A board that moves while you are cutting is one of the most common causes of serious kitchen cuts. If a board rocks or slides and you cannot stop it, do not carry on cutting on it.

Step by step

  1. Wet a cloth and wring it out.Damp, not dripping. A soaked cloth is slippery in its own right. A folded tea towel, a dishcloth or two sheets of kitchen roll all work.
  2. Lay it flat and smooth under the board.Spread it so there are no ridges. The suction between the wet cloth, the board and the worktop is what holds it, and a lumpy cloth breaks that contact.
  3. Press the board down onto it.A firm push seats the board and expels the air underneath. It should now be essentially immovable.
  4. Check the worktop is clean and dry underneath.Oil or flour on the surface defeats any grip. Wipe and dry the area before setting up.
  5. Consider a silicone mat as a permanent option.A thin silicone or rubber mat kept under the board does the same job without needing rewetting. Useful if you cook a lot, though no better than a damp cloth.
  6. Check whether the board has warped.Press each corner in turn. If it rocks, the board is cupped — usually from being washed hot on one side or dried leaning. No cloth fixes a rocking board.
  7. Store boards flat or on edge.Leaning a wooden board against a wall dries one face faster than the other, which is exactly what warps it. Flat, or in a rack that lets air reach both sides.
  8. Work well back from the edge.A board overhanging the worktop tips under pressure. Position it so the whole base is supported before you start.

Tips

  • Cheap thin plastic boards flex and slide however well you anchor them. A heavier board is a genuine safety improvement.
  • Rubber feet can be stuck on the underside of a board that will not stay put, though they make it awkward to use both faces.
  • Change the cloth for a clean one when you switch from raw meat to anything else — it touches the worktop and the board base.

Questions people ask

How do you stop a chopping board from moving?

Put a damp, wrung-out cloth or a few sheets of damp kitchen roll flat underneath and press the board down onto it. The suction holds it firmly and it takes seconds.

Why does my chopping board rock?

It has warped, usually from washing one face in hot water or drying it leaning against something. A warped board cannot be made safe with a cloth and should be replaced.
