Why does my sauce go thin when I reheat it?
What happens to starch granules when a sauce is cooked, cooled and reheated — why some sauces thin, others weep, and which thickener to use for something you will not eat straight away.

Short answer
Starch thickens by swelling. Cooked too long, boiled hard or reheated, the swollen granules burst and the chains are cut short, and the sauce thins permanently. Cooled, the surviving chains re-associate and squeeze water out, which is the weeping you see on a fridge-cold lasagne. Flour survives this far better than cornflour.
It is worth knowing what a thickened sauce physically is, because it explains four separate complaints at once — the sauce that thins on reheating, the one that weeps in the fridge, the one that goes gluey, and the one that never thickened at all. All four are the same set of granules at different points in their life.
Step by step
- Cold slurry: nothing is happening.Starch granules are hard, insoluble spheres. In cold liquid they sit there doing nothing at all, which is why a cornflour slurry stays thin in the cup and why starch does not thicken anything until it is heated.
- Heated to 60–80°C: the granules swell and the sauce thickens.Water forces its way in, each granule swells to many times its size, and long starch chains begin leaking out into the liquid. Thickness is the result of bulky swollen granules crowding each other and loose chains tangling. Nothing has dissolved.
- Boiled hard or held simmering: the granules burst and the sauce thins.The swollen granules collapse into rags and heat, acid and stirring cut the long chains into shorter pieces. The sauce loses thickness and no amount of further cooking brings it back, because the structure doing the thickening has been destroyed.
- Cooled: the chains re-associate and squeeze water out.This is retrogradation. The chains that were spread through the liquid partly line up with each other again as the sauce cools, and water is expelled into visible puddles. It is why a fridge-cold sauce weeps and why a defrosted lasagne sits in liquid.
- Reheated: some of it reverses, and some of it does not.Warming re-disperses part of the re-associated structure, so a weeping sauce often comes back with whisking. But any chains that were cut short by over-boiling are gone for good, which is why the reheated sauce is thinner than it was the first time.
- Act on it: add starch late, and stop cooking once it thickens.Bring the sauce to a simmer, add the thickener, give it one to two minutes, and stop. Simmering a thickened sauce on for twenty minutes takes it past its peak.
- Choose the thickener for the sauce's future.Eating it now: anything. Reheating tomorrow, freezing, or baking in a dish: plain flour or a roux. Cornflour is the worst choice for all three and it is the one most people reach for.
Tips
- Acid is hard on starch. A tomato or lemon sauce thickened with cornflour will thin faster than a plain one, which is where arrowroot earns its place.
- A sauce that has to be frozen is better thickened with flour, tapioca or a purée. Cornflour-thickened sauces come out of the freezer watery.
- A gluey sauce is the opposite failure — too much starch, or starch cooked with too little liquid, so the granules cannot swell freely.
- Reheat thickened sauces gently and whisk as they warm. Blasting them in a microwave overheats the edges and thins them further.
- This is the same mechanism as stale bread. Retrogradation is what makes bread firm up, and warming it briefly reverses part of it in the same way.
If it doesn't work
Sauce thin after reheating, was thick yesterday
Cause: Cornflour-thickened, and the granules have broken down — Fix: Whisk in a fresh cornflour slurry and bring it to a simmer for one minute. Next time thicken with flour instead.
Watery liquid pooling around a cold sauce or bake
Cause: Retrogradation — the starch chains have re-associated and expelled water — Fix: Reheat gently and whisk. Most of it comes back. Serving hot rather than warm hides the rest.
Sauce never thickened at all
Cause: Never reached about 60°C, or the starch was added off the heat — Fix: Bring it to a proper simmer. Starch cannot thicken cold liquid however long you stir it.
Sauce thickened then turned thin during a long simmer
Cause: Held past the peak, often accelerated by acid in the dish — Fix: Re-thicken at the end with a fresh slurry or a beurre manié, and add thickener later in the cooking next time.
Questions people ask
Can I just add more cornflour to a sauce that thinned?
Yes, and it works — mix a fresh slurry with cold water and simmer it in for a minute. The point is that you are adding new granules, not repairing the old ones. If the sauce is going to be reheated again the same thing will happen again, so for anything you plan to keep, re-thicken with a beurre manié instead.
Why does my white sauce set solid in the fridge but stay thin in the pan?
Because starch-thickened sauces gain a large amount of thickness as they cool — the granules stop moving and the chains re-associate. A béchamel at a simmer that looks barely thick enough will be sliceable at fridge temperature. Judge the consistency at the temperature you will serve it, and expect a cold sauce to need loosening with milk when it is reheated.
