Why has my stainless steel pan gone rainbow-coloured or chalky white?
Iridescent tints, white chalky spots and blue-brown patches on stainless steel — three different marks with three different causes, all cosmetic and all removable.

Short answer
Rainbow tint is a heat oxide layer from overheating — remove it with a little white vinegar or a stainless cleaner. Chalky white spots are calcium from hard water, usually from salt added before the water boiled — vinegar or lemon takes them off. Brown or blue clouding is burnt-on residue or heat staining. None of them affect safety or the pan's performance.
Stainless steel is inert and does not corrode in a kitchen, so anything that appears on the surface is either a very thin oxide layer or something deposited on it. Both wipe off with an acid, once you know which you are looking at.
Step by step
- Identify the rainbow tint.Iridescent bands of straw, purple, blue and sometimes brown, usually in the middle of the base or up the sides where the flame reaches. This is a heat tint — the chromium oxide layer that makes steel stainless has thickened slightly with heat and now interferes with light. It is harmless and does not mean the pan is damaged.
- Remove the tint with an acid.A splash of white vinegar or lemon juice in the cool pan, rubbed round with a cloth for a minute, then rinsed. A proprietary stainless steel cleaner such as the pink cream types does the same faster. Do not use wire wool, which scratches the finish permanently.
- Identify the chalky white spots.Small white deposits or a cloudy film, usually in a pan used for boiling water or pasta. This is calcium and other minerals from hard water, and it is far more pronounced if you add salt before the water has come to the boil, because the salt sits undissolved on the hot base.
- Remove the white marks the same way.Vinegar or lemon juice, left to sit for a few minutes if the deposit is heavy, then washed normally. For a heavy build-up, simmer a mixture of one part vinegar to three parts water in the pan for five minutes and it will lift off.
- Identify brown or blue-black clouding.A dull, uneven brown or blue-grey film that does not wash off. This is usually a very thin layer of burnt-on oil or food, polymerised onto the surface. It can also be a more severe heat stain from a pan left empty on a high ring.
- Remove burnt-on residue with a soak and a soft abrasive.Simmer water with a spoonful of bicarbonate of soda in the pan, leave to soak, then work with a nylon scourer or a stainless-safe cream cleaner. Repeat rather than escalating to wire wool. Bar Keepers Friend and similar oxalic acid cleaners are made for this and are safe on stainless.
- Prevent the marks recurring.Add salt only after the water is boiling and stir it in. Do not preheat an empty pan on high — most heat tint comes from that. Use a hob ring that matches the base. Dry the pan rather than letting it drip dry if you are in a hard water area.
Tips
- None of these marks affect the food, the safety or the performance of the pan. If the polished look does not matter to you, they can be left indefinitely.
- Avoid bleach and chlorine-based cleaners on stainless steel. Chloride ions are the one thing that genuinely pits stainless, and prolonged contact leaves permanent small dark marks.
- Dishwasher detergent can dull stainless over time and will leave white deposits in hard water. Hand washing keeps a pan looking new for far longer.
- Do not leave salty water or acidic food standing in a stainless pan overnight. It is not reactive during cooking but long standing contact with concentrated salt can pit the surface.
If it doesn't work
Rainbow tint returns every time you use the pan
Cause: The pan is routinely being run hotter than it needs to be — Fix: Drop the hob setting. Stainless conducts less well than aluminium, so a high setting on a thin pan concentrates heat and tints it. Preheat gently and use the middle of the dial.
White spots keep coming back
Cause: Hard water and salt added to cold water — Fix: Salt only once the water is boiling, and dry the pan after washing. In very hard water areas, a rinse with a little vinegar after washing keeps it clear.
A dark ring the size of the hob element
Cause: Overheating an empty or nearly empty pan — Fix: Cream cleaner and a nylon pad. Then stop preheating empty — put the fat in at the start so there is something absorbing the heat.
Questions people ask
Is the rainbow discolouration harmful?
No. It is the chromium oxide layer that protects the steel, made slightly thicker by heat. It is purely an optical effect and it does not leach anything into food.
Can I use wire wool on stainless steel?
You can, and it will scratch the finish permanently and make future marks harder to remove because they lodge in the scratches. Use a nylon pad and a cream cleaner instead.
Why does food stick in my stainless pan?
Almost always because the pan was not hot enough when the food went in, or there was too little fat. Heat the dry pan until a drop of water skitters across it rather than boiling on the spot, then add the oil, then the food.
