Cooking handles bacterial spoilage. It does not touch norovirus or algal biotoxins, which come from the growing water and are the causes of most serious shellfish illness. Buy from suppliers who source from classified, monitored waters, keep it cold, cook it thoroughly if you are in a vulnerable group, and treat any tingling or numbness after eating as an emergency.
Shellfish safety is discussed almost entirely in terms of inspecting the animal — tapping shells, checking they opened, smelling them. Those checks answer one question out of four, and it is the least consequential one. Knowing what the other three are changes where you put your attention.

- Bacterial spoilage — the one your senses can detect.Shellfish that died and warmed up grows bacteria and breaks down. It smells sour, ammoniac or cheesy, feels slimy and looks dull. This is what the sniff test, the tap test and the discard rules are actually good for. Cooking does not make spoiled shellfish safe, because some of the toxins bacteria produce are heat-stable.
- Norovirus — the commonest cause of shellfish illness in Britain.Bivalves filter enormous volumes of water and concentrate whatever is in it, including sewage-derived viruses. Norovirus is invisible, has no smell, and survives light cooking and every kind of chilling, dressing and acidulating. It is the reason raw oysters carry a real risk, and it peaks in winter, not summer.
- Algal biotoxins — rare, serious, and completely undetectable.Shellfish accumulate toxins produced by algal blooms. Paralytic, amnesic, diarrhetic and azaspiracid shellfish poisoning are the recognised syndromes. None of them is destroyed by cooking, freezing or any domestic process, and none changes how the shellfish looks, smells or tastes. Control is entirely through official monitoring of harvesting areas, which is why hand-gathering shellfish yourself is the genuinely risky act.
- Allergy — a different thing entirely.Crustacean allergy and mollusc allergy are two separate entries among the fourteen allergens that must be declared in the UK. Reactions can be severe and are not dose-dependent in the way people assume. Cooking does not reduce allergenicity, and steam from cooking shellfish can trigger a reaction in sensitive people.
- Match each cause to its actual control.Spoilage: cold chain and buying fresh. Norovirus: source, purification, and cooking properly. Biotoxins: buy from monitored classified waters and never gather your own bivalves. Allergy: avoidance and clear communication when eating out.
- Know when it is more than an upset stomach.Ordinary shellfish food poisoning is unpleasant and self-limiting. Tingling or numbness of the lips, mouth or fingers, dizziness, difficulty swallowing or breathing, or muscle weakness within a few hours of eating shellfish points at a biotoxin and needs emergency help immediately.
Tips
- Do not gather your own mussels, cockles or clams from the shore unless the area is a classified harvesting area and currently open. Biotoxin and sewage monitoring is the entire safety system for bivalves, and gathering privately opts out of it.
- If you are pregnant, immunocompromised, elderly or feeding young children, eat shellfish cooked through and skip raw oysters entirely. Cooked shellfish is not a restricted food for those groups.
- Cook shellfish thoroughly rather than briefly if norovirus is the concern — a quick steam that just opens the shells does not reliably reach the temperatures required.
- Report suspected shellfish poisoning to your local authority's environmental health team. It is how contaminated batches get traced, and it costs you a phone call.
- A restaurant that can tell you where its oysters came from that morning is telling you the only thing that actually matters.
Common mistakes
- Treating the shell rules as the safety system — Tapping, sorting and discarding find spoilage and dead animals. They find neither of the two causes responsible for most serious illness. They are a quality check that has been promoted well beyond its abilities.
- Believing lemon, vinegar or alcohol makes raw shellfish safe — None of them inactivates norovirus or a biotoxin at the concentrations found in a dressing or a drink. This is one of the most persistent and most wrong pieces of food folklore.
- Collecting shellfish from a beach because the water looks clean — Clarity says nothing about sewage contamination or algal toxins. Both are invisible. Classified harvesting areas exist because you cannot make this judgement by looking.
Questions people ask
Does freezing shellfish make it safer?
It helps with parasites in fish but does very little for shellfish risk. Norovirus survives freezing well, biotoxins are unaffected, and bacteria are paused rather than killed. Freezing is a storage method, not a safety treatment.
Why do I get ill from shellfish when nobody else at the table does?
Contamination is not uniform — one oyster in a dozen can carry a viral load the others do not. It may also be a mild allergy rather than an infection. Repeated reactions to shellfish specifically are worth discussing with a GP rather than assuming bad luck.
Is shellfish safe in pregnancy?

How long after eating do symptoms appear?
Biotoxins act fastest, typically within thirty minutes to a few hours. Bacterial illness usually takes a few hours to a day. Norovirus generally takes twelve to forty-eight hours, which is why people so often blame the wrong meal.
