Why do my roast potatoes stick to the tin?

Sticking is a temperature and contact problem, not a fat quantity problem. The five causes, in the order that finds it fastest, and how to get a stuck tray off intact.

Short answer

The fat was not hot enough when the potatoes went in, so starch bonded directly to metal instead of frying instantly. Heat the tin with the fat in the oven until it shimmers, add the potatoes and do not touch them for at least twenty minutes — a crust that has formed releases itself, and prodding at ten minutes tears it off and leaves it welded to the tin.

There is a moment when a roast potato is genuinely stuck and a later moment when the same potato lifts freely, and most sticking complaints come from intervening between the two.

Step by step

  1. Preheat the fat in the tin, not on the hob or in the potatoes.Put the tin with the fat into the oven while it comes up to 200–220°C, and give it a further five minutes at temperature. The fat should shimmer and a potato should sizzle audibly the moment it lands. This is the single most common failure.
  2. Dry the potatoes before they go in.Wet potatoes drop the fat temperature immediately and steam rather than fry. Steam-dry them in the pan after par-boiling and let them stop giving off visible steam.
  3. Leave enough space.A crowded tray traps steam between the potatoes, and steam plus starch is glue. Every potato should have air around it. Use two tins rather than one packed one.
  4. Do not turn them early.Give them at least 20 minutes before the first turn, then turn once or twice more. When the crust has formed it releases from the metal by itself. If they resist, they are not ready — put them back for another five minutes and try again.
  5. Consider the tin itself.A thin, light, warped or badly scratched tin sticks more, because contact is uneven and it recovers heat slowly. A heavy steel or cast iron roasting tin, or a well-used one with a seasoned surface, sticks far less. Enamel and non-stick both work but non-stick coatings degrade at high oven temperatures over time.
  6. Rescue a stuck tray with a thin fish slice and patience.Take the tin out and let it stand for two minutes — as it cools slightly the metal contracts and the bond loosens. Then slide a thin metal fish slice or palette knife flat along the tin surface under each potato rather than levering from above.

Tips

  • Baking parchment stops sticking completely but also stops the direct metal contact that gives the darkest, crispest underside. It is a reasonable trade if you keep losing potatoes.
  • Fats with milk solids or low smoke points — butter, unrefined oils — burn and stick at roasting temperatures. Beef dripping, goose fat, rapeseed oil and sunflower oil do not.
  • Salting the potatoes before they go into the fat draws moisture to the surface. Salt them as they come out instead.

If it doesn't work

Crusts left welded to the tin, potatoes bald on one side

Cause: Turned too early, before a crust had set — Fix: Leave 20 minutes untouched next time. Soak the tin in hot water and it will lift off easily.

Everything stuck and pale

Cause: Fat not preheated, or potatoes wet — Fix: Nothing recovers this batch fully. Preheat the fat properly and dry the potatoes next time.

Stuck only in the middle of the tray

Cause: Overcrowding; steam collecting where air cannot circulate — Fix: Spread across two tins with clear space around each potato.

Questions people ask

Would more fat solve it?

Only marginally. You need enough to coat the base and the potatoes, and beyond that the variable is temperature, not volume. Deep fat that is not hot enough still sticks.

Does a non-stick roasting tin work at 220°C?

It works, but sustained high heat shortens the life of the coating and non-stick surfaces give a less impressive crust than bare metal. For roast potatoes specifically, heavy uncoated steel is better.
