Short answer

Keep the liquid between 70 and 80°C — barely trembling, with no rolling bubbles. Boiling is what breaks delicate food apart, and the difference between poaching and simmering is entirely temperature.

Poaching cooks food gently in liquid held well below boiling. The gentleness is the point: it keeps fish intact, chicken tender and fruit whole, all of which a boil would destroy.

What you'll need

  • Wide shallow pan
  • Poaching liquid — stock, milk, wine or water
  • Thermometer (optional)
  • Slotted spoon

Step by step

  1. Choose a pan the food fits in a single layer.Wide and shallow. Piled up, the pieces cook unevenly and break as you move them.
  2. Season and flavour the liquid.Poaching liquid transfers flavour both ways. Plain water gives bland results — use stock, or add aromatics, wine or lemon.
  3. Bring it to a bare tremble, not a boil.70-80°C. The surface should barely move and you should see occasional small bubbles at the base, not a rolling boil.
  4. Lower the food in gently.A slotted spoon or a spatula. Dropping delicate food in from a height is how it breaks.
  5. Hold the temperature.Adjust the heat down after the food goes in — cold food drops the temperature, and the instinct to compensate usually overshoots into a simmer.
  6. Judge doneness by feel and time, not by the clock alone.Fish flakes and turns opaque, chicken firms up, fruit yields to a knife tip. Thin fish takes minutes; a chicken breast eight to twelve.
  7. Lift out carefully and let it drain.Poached food is fragile straight from the pan. A slotted spoon and a moment to drain.

Tips

  • Poached chicken is one of the best uses of the technique — far more tender than a dry-cooked breast, and the liquid becomes a light stock.
  • For eggs, a splash of vinegar helps the white set and a gentle whirlpool keeps it together. Fresh eggs hold together far better than old ones.
  • Let the food cool in the liquid if you are serving it cold. It stays much more moist that way.

Common mistakes

  • Letting it boil — Agitation breaks up fish and fruit, and toughens chicken. Poaching is defined by staying below a simmer.
  • Poaching in plain unseasoned water — Flavour leaches out into the water. Season the liquid so the exchange runs the other way.

Questions people ask

What temperature is poaching?

Around 70-80°C — barely trembling with occasional small bubbles. Once it simmers properly you are no longer poaching.

Can I reuse the poaching liquid?

Yes, especially from chicken or fish. Strain it and use it as a light stock, or reduce it into a sauce.
