How do I make overnight oats that are not slimy?

The ratio, the oat type and the two additions that change the texture completely — plus why the jar you made on Sunday is inedible by Thursday.

Short answer

Use rolled oats, not instant or jumbo, at roughly 1 part oats to 1 part liquid by volume, and eat them within three days. Instant oats disintegrate into paste; too much liquid gives you soup; and beyond about three days the oats keep swelling and the texture goes claggy. A spoonful of yoghurt and something acidic — fruit, lemon — cuts the sliminess more than anything else.

Overnight oats are cold-soaked rather than cooked, so the oat texture you start with is close to the texture you end with. Almost every complaint about them traces back to the oat or the ratio rather than anything you did.

Step by step

  1. Use rolled oats — porridge oats, in UK terms.Standard rolled oats soften properly overnight while keeping some structure. Instant or 'quick' oats are pre-cut and pre-steamed and turn to paste. Jumbo oats stay chewy and never fully soften cold. Steel-cut or pinhead oats need cooking and do not work at all this way.
  2. Start at one part oats to one part liquid.By volume — 50 g oats to about 100 ml liquid is a good single portion, and adjust from there. More liquid gives a looser, more spoonable result; less gives something you could turn out of the jar. Milk, plant milk, kefir or a mix of milk and yoghurt all work.
  3. Add yoghurt for body and acidity.A couple of tablespoons of natural or Greek yoghurt replacing some of the milk changes the texture from slippery to creamy, and its acidity is what stops it tasting flat. This is the single best addition.
  4. Add chia or ground flaxseed only if you want it thicker.A teaspoon of chia seeds absorbs several times its weight in liquid and sets the whole thing into a gel. Excellent if you like that texture, unpleasant if you were not expecting it. Add liquid to compensate if you use them.
  5. Season it.A pinch of salt, exactly as in cooked porridge. It is the difference between oats that taste of nothing and oats that taste of oats. Vanilla, cinnamon, cardamom or a spoonful of nut butter all go in now.
  6. Keep the wet fruit separate until morning.Berries and grated apple stirred in the night before leach water and go grey. Layer them on top in the morning, or use dried fruit overnight — dried apricots, raisins and dates plump up beautifully and sweeten the whole jar.
  7. Refrigerate for at least four hours and eat within three days.Overnight is convenient but four hours is enough. The oats keep absorbing every day they sit, so a batch made for a week is soup on Monday and cement by Friday. Three jars at a time is about the useful limit.

Tips

  • Toasting the dry oats in a pan for a few minutes before soaking gives a far better flavour and costs nothing.
  • They can be eaten warm — thirty seconds in the microwave turns overnight oats into something much closer to porridge, which is a fair option on a cold morning.
  • Frozen berries stirred in at night thaw overnight and release their juice into the oats, which some people love and some find watery. Try it once and decide.
  • A jar with a lid you can eat out of is the whole appeal. Anything that has to be decanted into a bowl loses the point.

If it doesn't work

Slimy or gluey

Cause: Instant oats, too little liquid, or no acidity — Fix: Switch to rolled oats, loosen with more milk, and add yoghurt or a squeeze of lemon.

Watery and separated

Cause: Too much liquid, or wet fruit added the night before — Fix: Stir it back together and add a spoonful more oats. Layer fruit on top in the morning.

Still hard and chewy

Cause: Jumbo or steel-cut oats, which do not hydrate cold — Fix: Use standard rolled oats, or warm the jar briefly before eating.

Fine on day one, unpleasant by day four

Cause: Continued absorption and the oats breaking down — Fix: Make three days at a time, not seven.

Questions people ask

Do overnight oats need to be soaked overnight?

Four hours is enough for rolled oats. Overnight is simply the convenient version.

Are they better for you than cooked porridge?

Nutritionally they are effectively the same food. Cold soaking retains a little more resistant starch, which is a small effect. Choose on convenience and preference.
