How do I make an espresso martini with good foam?

Short answer

Use fresh hot espresso, shake very hard with plenty of ice, and include enough sugar — the foam comes from coffee oils and needs both vigorous shaking and some sweetness to hold. Cold or stale coffee gives no foam at all.

The foam is the whole point and it comes from crema and coffee oils emulsified by shaking. That means the espresso must be fresh, the shake must be genuinely hard, and there must be enough sugar to stabilise it.

Step by step

  1. Pull a fresh espresso.Fresh and hot, with visible crema. Cold or stale coffee produces almost no foam, which is the most common reason home versions fall flat.
  2. Use roughly 50ml vodka, 25ml coffee liqueur, 25ml espresso and a little syrup.Adjust the syrup to taste and to how sweet the liqueur is. Some sweetness is needed for the foam to hold.
  3. Fill the shaker with ice.Plenty of it. A half-empty shaker over-dilutes and does not chill the hot espresso quickly enough.
  4. Shake very hard for 15-20 seconds.Harder and longer than a normal cocktail. The foam is created by the shaking, so a timid shake gives a flat drink.
  5. Double strain into a chilled glass.Through a fine sieve as well as the shaker strainer. It removes ice shards so the foam sits cleanly on the surface.
  6. Pour in one steady motion.Stopping and starting breaks the foam. One continuous pour gives the clean layer on top.
  7. Garnish with three coffee beans if you like.Traditional, and it adds aroma as you drink. Place them once the foam has settled.
  8. Serve immediately.The foam is temporary. It begins collapsing within a couple of minutes, so make it when people are ready to drink it.

Tips

  • If you have no espresso machine, strong AeroPress or moka pot coffee works, though the foam will be less pronounced without crema.
  • Chill the glass while you shake. A warm glass collapses the foam almost immediately.
  • For several drinks, shake in batches of no more than two. A full shaker cannot generate enough agitation for good foam.

Common mistakes

  • Using cold or leftover coffee — The crema and oils that create the foam are gone. Fresh hot espresso is what makes the drink work.
  • Shaking gently — The foam is generated entirely by agitation. A soft shake gives a flat brown drink with no head at all.
  • Leaving out the sugar entirely — Some sweetness is needed to stabilise the foam. Without it the head collapses within seconds.
