How long should I wait before grouting?

Short answer
Wait as long as the adhesive bag states before grouting, and longer in cold or humid conditions or over a non-absorbent substrate. Grouting early is a common cause of patchy grout colour, because the adhesive is still releasing moisture into the joints as they cure.
Everyone wants to grout the same day, and the tiles look ready long before the adhesive is. What is happening under them is a chemical cure that needs its water, and sealing the joints changes how that water leaves. The two visible consequences — blotchy grout and grout that stays soft — are both traced back to this.
Step by step
- Read the adhesive bag, not the tile box.The waiting time is a property of the adhesive. Rapid-set products can be grouted in a few hours; standard ones take substantially longer.
- Allow longer in cold or damp conditions.Cure rates fall as temperature falls. An unheated bathroom in winter is a very different environment from the one the stated time assumes.
- Allow much longer over a non-absorbent substrate.On plywood, existing tiles or a tanked wall, the adhesive can only lose water through the joints, so it cures far more slowly than the same product on absorbent plaster.
- Check the joints before mixing grout.Scrape a little adhesive out of a joint with a knife. Firm and dry through is ready. Cool, damp or soft means wait.
- Rake the joints clean while you wait.Remove any adhesive that has squeezed up into the joints. Grout over adhesive gives an uneven depth and is a common cause of colour variation.
- Do not remove spacers early on a wall.They are also holding the tiles in position while the adhesive develops strength.
- Wait again after grouting before using a shower.Grout and sealant both need to cure before getting wet. This is a separate wait from the adhesive one, and it is where people trip up on a bathroom job.

What actually goes wrong if I grout too early?
Water still leaving the adhesive migrates through the fresh grout and affects how it cures, which shows as patchy shading. In the worst case the adhesive underneath never reaches full strength.
Can I grout a floor and walk on it?
Those are two different waits. Walking on the floor has its own minimum time from the adhesive, and grouting has another from the grout. Both are on the respective bags.
