How do I froth milk at home?

How to get smooth microfoam rather than stiff bubbles, with a steam wand, a frother or just a jar.

Short answer

Aim for smooth, glossy microfoam rather than stiff dry foam. With a steam wand, introduce air for the first few seconds only, then submerge the tip to create a whirlpool. Without one, a jar shaken hard then microwaved for 30 seconds works surprisingly well.

The difference between good and bad frothed milk is bubble size. Large bubbles give a dry, stiff foam that sits separately on top of the coffee; small bubbles give microfoam that folds through the drink. Almost every technique below is about breaking bubbles down rather than making more of them.

Step by step

  1. Start with cold milk and a cold jug.Cold milk gives you longer before it reaches temperature, which means more time to texture it.
  2. Fill the jug no more than a third to halfway.The milk expands considerably. Overfilling is the most common cause of overflow.
  3. With a steam wand, put the tip just under the surface and open the steam fully.You should hear a gentle tearing sound. That's air being introduced.
  4. Introduce air for only the first 3–5 seconds, then submerge the tip deeper.This is the critical part. Air only at the start; after that you're breaking bubbles down, not adding more.
  5. Angle the jug so the milk spins in a whirlpool.The whirlpool is what breaks large bubbles into microfoam. Without it you get stiff foam.
  6. Stop at around 60–65°C — when the jug is uncomfortably hot to hold.Above about 70°C milk proteins break down, the sweetness goes and it starts to taste scalded.
  7. Tap the jug on the counter and swirl to break any remaining large bubbles.It should look glossy, like wet paint. Dry, stiff foam means too much air.
  8. Without a steam wand, half-fill a jar, shake hard for 30 seconds, then microwave for 30 seconds.The shaking creates the foam; the heat stabilises it. Genuinely effective and needs no equipment.

Tips

  • Whole milk froths most easily because fat and protein both stabilise the foam. Semi-skimmed produces more volume but a drier texture.
  • Of the plant milks, barista-formulated oat milk performs best — standard versions often split or refuse to foam.
  • Use frothed milk immediately. It separates within a minute or two.
  • Milk can only be steamed once. Re-steaming denatures the proteins and it won't texture again.

Common mistakes

  • Adding air throughout — Produces stiff, dry, bubbly foam rather than smooth microfoam.
  • Overheating past 70°C — Scalds the milk, destroys the natural sweetness and stops it texturing.
  • Overfilling the jug — Milk expands substantially and overflows.
  • Re-steaming milk — The proteins have already denatured, so it won't foam again.

Questions people ask

What temperature should frothed milk be?

Around 60–65°C. Beyond about 70°C the proteins break down, the milk loses its sweetness and starts tasting scalded. If the jug is too hot to hold comfortably, it's there.

Which plant milk froths best?

Barista-formulated oat milk is generally the most reliable, since it's specifically formulated with added stabilisers. Standard versions frequently split or won't hold foam.
