Short answer

Slice it first, wrap it tightly, and freeze it as fresh as possible. Toast slices straight from frozen. Never keep bread in the fridge — it goes stale several times faster than at room temperature.

Bread freezes extremely well and refrigerates extremely badly, which is the opposite of what most people assume.

Step by step

  1. Freeze it fresh. On the day of baking or purchase. Freezing pauses staling, it does not reverse it — day-old bread thaws as day-old bread.
  2. Slice before freezing. It lets you take out what you need and toast it directly from frozen, which is far more useful than defrosting a whole loaf.
  3. Wrap it tightly.Freezer bag with the air pressed out, or wrapped in film then bagged. Air contact causes freezer burn, which dries the crumb.
  4. Double wrap for longer storage.Anything staying more than a month benefits from a second layer. Bread absorbs freezer odours readily.
  5. Interleave slices if you want singles.Baking paper between slices, so they separate easily. Otherwise they freeze into a block.
  6. Toast straight from frozen. No defrosting needed. A slightly longer toasting cycle and the result is essentially the same as fresh.
  7. Refresh a whole loaf in the oven.Thaw at room temperature in its wrapping, then five to ten minutes in a hot oven. It restores the crust remarkably well.
  8. Never store bread in the fridge.Starch retrogradation — the process that makes bread stale — happens fastest just above freezing. Fridge bread stales several times faster than bread on the worktop.
  9. Use it within about three months. It stays safe indefinitely but quality declines. Three months is a realistic limit for good results.
  10. Use stale bread rather than binning it.Breadcrumbs, croutons, panzanella, bread sauce, French toast. Stale bread is an ingredient rather than waste.

Tips

  • Slice before freezing. It is the difference between useful and inconvenient.
  • Toast straight from frozen — no defrosting needed.
  • The fridge is the worst place for bread. It stales fastest just above freezing.

Common mistakes

  • Keeping bread in the fridge to make it last — Staling is caused by starch recrystallising, and that happens fastest at fridge temperature. Bread in the fridge goes stale several times faster than bread left out.
  • Freezing a loaf whole and unsliced — You then have to thaw the entire loaf to use any of it, which means repeated thawing or waste. Sliced bread can be used a piece at a time from frozen.

If it doesn't work

Frozen bread dry and crumbly

Cause: Freezer burn from poor wrapping — Fix: Wrap tightly and double-bag. Affected bread is still fine for breadcrumbs.

Bread tastes of the freezer

Cause: Absorbed odours through thin wrapping — Fix: Double wrap. Bread absorbs smells readily.

Crust gone soft after thawing

Cause: Moisture redistribution — Fix: Five to ten minutes in a hot oven restores it.

Slices frozen into a block

Cause: No interleaving — Fix: Put baking paper between slices before freezing.

Questions people ask

Can I toast bread straight from the freezer?

Yes, and it is the main reason to slice before freezing. Use a slightly longer setting and the result is very close to fresh.

Why does bread go stale faster in the fridge?

Staling is starch recrystallising rather than drying out, and that process runs fastest just above freezing. The freezer is cold enough to stop it; the fridge is exactly the wrong temperature.
