Why will my brioche or bun dough not rise?
Fat and sugar both slow yeast down and both interfere with gluten, so an enriched dough is genuinely harder to raise than a lean one. What is normal, what is a fault, and how to tell them apart.

Short answer
Enriched doughs rise perhaps half as fast as a plain white dough, so a rise that looks stalled is often just slow. Give it longer and somewhere around 24–26°C. If it has genuinely not moved in three hours, suspect the yeast, the salt-to-yeast contact, or fat added before the gluten was developed.
Butter, egg, milk and sugar all make bread better to eat and all make it harder to raise. Sugar competes with the yeast for water and at high concentrations dehydrates the cells outright. Fat coats gluten strands so they cannot link, and it physically weighs the dough down. The result is that an enriched dough is slow by design — and people abandon perfectly good doughs because they compared them to a lean loaf.
Step by step
- Give it substantially more time before you diagnose anything.A brioche or bun dough at ordinary room temperature can take two to three hours to double where a plain white dough takes one. Cold butter straight from the fridge slows it further because it chills the whole dough.
- Check the temperature it is proving at.Enriched doughs want 24–26°C, warmer than a lean dough. A 17°C kitchen in winter can stall one almost entirely. An oven with just the light on, or a bowl of warm water in a closed microwave, gets you there.
- Check when the fat went in.Butter should be added after the gluten has begun to develop, in soft pieces, a little at a time. Adding all the butter at the start coats the flour and the dough may never develop the strength to hold gas at all.
- Check the sugar level.Above roughly 10 per cent of the flour weight, ordinary yeast starts to struggle. Above 15–20 per cent you want an osmotolerant yeast — sold as 'gold' instant yeast — or you need to accept a very long rise.
- Check the yeast itself and how it met the salt.Yeast more than a few months open, or dissolved into liquid alongside salt or straight into hot milk, is the ordinary cause of a dough that never starts. Test it: a teaspoon in warm sweetened water should foam within ten minutes.
- Knead it far longer than a lean dough.Enriched doughs need serious gluten development to hold gas against the fat. Ten to fifteen minutes in a stand mixer is normal; the windowpane test is the target and it takes a while to reach.
- Consider a two-stage method.Make a sponge or preferment from part of the flour, the yeast and the liquid, let it become active on its own, and then add the sugar and butter. This gives the yeast a head start before it meets the things that slow it down.
Tips
- An overnight rise in the fridge suits enriched dough particularly well: the butter firms up, the dough becomes far easier to shape, and the flavour improves.
- Weigh the butter and bring it to a soft, spreadable state before adding it. Cold cubes will not incorporate and hot melted butter makes a batter.
- Hot cross bun dough carries dried fruit as well, which adds weight and draws water. Soak the fruit and drain it, and add it after the first rise.
- Enriched loaves brown fast because of the sugar and the milk. Expect to cover them with foil partway through the bake.
Common mistakes
- Judging an enriched dough by a lean dough's timings — Recipes often reuse 'until doubled, about an hour' out of habit. For brioche that figure is simply wrong and it makes people conclude their yeast is dead.
- Adding extra yeast to speed it up — You get a yeasty flavour and a dough that over-proves and collapses in the oven, which is worse than slow. Fix the temperature instead.
If it doesn't work
Dough is slow but slowly growing
Cause: Normal enriched-dough behaviour, made slower by a cool kitchen. — Fix: Warm the proving spot to 24–26°C and be patient. Nothing is wrong.
No movement at all in three hours
Cause: Dead yeast, yeast killed by hot liquid, or yeast dissolved in direct contact with salt. — Fix: Test the yeast separately before remaking. Milk for enriched dough should be lukewarm, not hot.
Dough is greasy, tears, and will not form a smooth ball
Cause: Butter added too early, or too much butter for the flour. — Fix: Develop the gluten first, then add soft butter in pieces with the mixer running.
Rose in the bowl but not in the tin after shaping
Cause: Degassed too hard at shaping, or the second prove judged by time in a cool room. — Fix: Shape gently and prove until visibly puffy and slow to spring back.
Rose, then collapsed in the oven
Cause: Over-proved. Enriched dough is weak and cannot hold a full prove as long as lean dough. — Fix: Bake at the puffy stage rather than the fully doubled one.
