At what temperature does an egg actually set?
White and yolk set at different temperatures, and almost every egg dish is an attempt to stop between the two. The ladder of temperatures that explains scrambled, poached, coddled, custard and hard-boiled all at once.

Short answer
Egg white starts setting at around 62°C and is firm by about 65°C. Yolk starts thickening around 65°C and is firm by about 70°C. That three-degree overlap is where a runny yolk with a set white lives, and it is why gentle heat gives you control that fierce heat does not.
Egg proteins unfold and link up as they heat, trapping water in a mesh. Keep heating and the mesh tightens and squeezes that water back out — which is the same event as watery scrambled egg, weeping quiche and a rubbery omelette. Once you know the numbers, every egg failure in the kitchen reads as the same overshoot.

- Learn the two setting points.White: it starts to turn opaque and thicken at roughly 62°C and is a firm gel by about 65°C. Yolk: it stays fluid until roughly 65°C, thickens to a fudgy paste around 68°C, and is fully firm by about 70°C. Different proteins, different temperatures.
- See why a soft-boiled egg is possible at all.Because the white is on the outside and sets first, a short cook in boiling water sets the white right through before the yolk in the middle has reached its own setting point. You are exploiting a temperature gradient, not a magic timing.
- Understand sugar and dilution moving the numbers up.Adding milk, cream or sugar raises the setting temperature — the egg proteins are further apart and have to work harder to find each other. That is why a custard sets around 80 to 85°C rather than 70°C, and why a sweet custard is more forgiving than a savoury one.
- Understand salt and acid moving them down.Both make proteins link up more readily, so a salted or acidified egg mixture sets slightly cooler and faster. It is why a splash of vinegar helps a poached egg hold together, and part of why lemon custards set firmly.
- Recognise the overshoot as one single failure.Past about 75 to 80°C, the protein mesh contracts and expels water. Watery scrambled eggs, a puddle under a quiche slice, a split custard and a bouncy omelette are all this. None of them are 'undercooked' — they are all overcooked.
- Separate texture from safety.Salmonella is reliably destroyed at 70°C held briefly, or lower temperatures held longer. That is above the point where a yolk stops running, which is exactly why the UK's British Lion scheme matters — it is what makes a runny yolk a reasonable thing for anyone to eat.
- Cook the medium, not the egg.You cannot hold a pan at 64°C, but you can control what the egg is sitting in. Water baths, bain-maries, low heat with constant stirring, and taking the pan off before it looks done all achieve the same thing: keeping the egg away from the temperature that ruins it.
Tips
- A 63 to 65°C water bath for about an hour gives the classic slow-cooked egg — white barely set and silky, yolk thickened but not firm. It is the clearest demonstration of the two setting points there is.
- Take scrambled eggs off the heat when they still look slightly too loose. Residual heat in the pan carries them several degrees further.
- For custards, a probe thermometer is worth more than any amount of technique. Pull at 82 to 84°C and you will never split one again.
- Cold ingredients slow everything down usefully. Adding a splash of cold cream to scrambled eggs at the end genuinely stops the carry-over cooking.
Common mistakes
- Cooking eggs hard and fast to save time — The setting window is a few degrees wide and high heat crosses it in seconds. Every second past it, the egg gets tougher and wetter simultaneously.
- Assuming a wet result means undercooked — Water expelled by a contracting protein mesh looks exactly like an undercooked egg, and the instinctive response — more heat — makes it worse. Wet plus rubbery always means overcooked.
Questions people ask
Why do my eggs cook differently in different pans?
Thermal mass. A heavy pan holds heat and keeps cooking after you take it off the hob, which pushes eggs past their setting point during resting. A thin pan responds fast but scorches. Non-stick over low heat gives most control for eggs.
Does egg size change the timings?
For boiled eggs, yes — the gradient has further to travel in a large egg, so it needs longer. For scrambled eggs and custards, no, because you are cooking to a temperature rather than through a thickness.
Is a runny yolk safe in the UK?
For British Lion or Laid in Britain marked hen eggs, yes, for everyone including pregnant women, infants and older people, following the FSA's 2017 change. Unmarked, imported, backyard, duck, goose and quail eggs are outside the scheme and should be cooked through.
