Can I cure my own bacon or ham at home?

Short answer
Yes, but only from a specific published method. Curing is salt plus, usually, a nitrite curing salt, applied at a measured rate for a measured time. The salt draws water out and the nitrite suppresses botulinum and gives bacon its colour and flavour. The quantities are safety-critical and must be weighed accurately from a tested recipe, not estimated.
Home-cured bacon is genuinely good and genuinely achievable, and it is also the point in home food production where the margin for error narrows sharply. The honest guidance is to explain what is happening and then send you to a properly tested method for the numbers, because a curing recipe written casually is a curing recipe that can hurt someone.

- Understand what the salt is doing.Salt draws water out of the meat and out of any bacteria in it, lowering the water available for microbial growth. That is the primary preservation mechanism and it is why cured meat keeps far longer than fresh.
- Understand what the nitrite is doing.Curing salts — sold in the UK as Prague Powder #1, cure #1 or similar, and dyed pink so they cannot be mistaken for table salt — supply sodium nitrite. It suppresses Clostridium botulinum, gives cured meat its pink colour and its characteristic flavour, and slows the fats going rancid. It is also toxic in quantity, which is why it is dyed and why it is used at very small measured rates.
- Know which of the two curing routes you are on.A wet or dry cure for bacon that will be cooked before eating is the beginner route and is much more forgiving. An air-dried, uncooked product — pancetta, coppa, salami, air-dried ham — is a different undertaking with humidity and temperature control, and is not a beginner project.
- Get the numbers from a tested source, and only from one source.A specialist curing supplier's published instructions, a book by a known charcutier, or a manufacturer's stated rate for their own product. Do not average two recipes, do not scale one by eye, and do not use an American recipe with a UK cure product without checking the two contain the same thing.
- Weigh, do not measure by spoon.Curing rates are given per kilogram of meat and the quantities are small enough that a jeweller's scale reading to 0.1g is the right tool. A teaspoon is not a unit of measurement here.
- Keep it cold throughout.Curing happens in the fridge, at 3 to 5°C, for the number of days the method specifies. Curing at room temperature is how things go wrong — the salt has not penetrated yet and the meat is sitting in the danger zone.
- Buy meat you know the source of.A butcher who can tell you when it was killed, and a piece that has not been sitting near its date. You are about to keep it for weeks; it needs to start as fresh as possible.
- Cook home-cured bacon before eating it.Bacon and gammon from a beginner's cure are cooked products. Nothing about the cure makes them safe to eat raw, and treating them as if it does is the classic beginner's mistake.
- Store it as a short-life fridge item unless the method says otherwise.Home-cured bacon lives in the fridge for a week or two, or in the freezer. It is not a shelf-stable product, whatever the shop-bought equivalent's packaging implies.
Tips
- Start with streaky bacon from pork belly. It is cheap, forgiving, cures in a few days and is the standard first project for a reason.
- Buy the curing salt from a specialist supplier with clear instructions on the packet, and keep it labelled and well away from ordinary salt. The pink dye exists precisely because people have confused the two.
- Rinse the cure off and soak or fry a test slice before you commit to the whole piece — an over-salted cure is fixable at that point by soaking, and not fixable afterwards.
- Curing without nitrite is possible for a bacon you will cook and eat within days, and is not appropriate for anything air-dried or long-kept.
Common mistakes
- Using a curing salt at a rate copied from a different product — Different cure products contain different nitrite concentrations and some contain nitrate as well. The rate is specific to the product, and using one product's rate with another's chemistry is how people get this dangerously wrong.
- Attempting air-dried charcuterie as a first project — Air-drying relies on the meat losing water faster than anything can grow in it, which needs controlled humidity and temperature over weeks and produces a product eaten uncooked. It is the hardest and least forgiving branch of curing, not the obvious next step from bacon.
Questions people ask
Do I have to use nitrite?
For bacon that will be cooked and eaten within a week or two from the fridge, a salt-and-sugar cure without nitrite is possible and is sometimes sold as 'nitrite-free bacon'. It will be grey rather than pink and tastes more like salt pork. For anything air-dried or kept longer, nitrite is doing a safety job that nothing in a domestic kitchen replaces, and the answer is to follow a tested method or not do it.
What about celery powder cures that claim to be nitrite-free?
Celery and other vegetable powders are used commercially because they are naturally high in nitrate, which is converted to nitrite during curing. They are a nitrite source with an uncertain concentration, not an absence of nitrite. That variability is why they are harder to use safely at home, not easier.
Can I cure a whole ham for Christmas?
A wet-cured gammon that you then cook is a realistic home project from a tested method. A dry-cured, air-dried, uncooked ham is a months-long project with humidity control and real risk, and is not something to attempt from a general guide.
