Why did my caramel taste burnt and bitter?
Caramel goes from amber to acrid over about twenty degrees, and it keeps darkening after the pan leaves the heat. Judging it by colour and stopping a stage early is the whole technique.

Short answer
Take the pan off the heat one shade lighter than the colour you want, because carryover heat darkens it further. Stop the cooking immediately by adding the cream or butter, or by standing the pan base in cold water. Burnt caramel cannot be corrected — start again.
Caramelisation is a browning reaction, and browning reactions accelerate. From clear molten sugar to pale straw takes a while; from amber to dark copper takes seconds; from copper to acrid smoke takes a few more. The consequence is that the last part of the process needs your full attention and no distraction, and that the residual heat in a heavy pan will carry the colour on for some time after you stop heating it. Step by step
- Use a pale, heavy pan.You are judging by colour, so a dark non-stick pan hides the caramel until it is too late. Stainless steel or a light-coloured heavy base lets you see the change as it happens. A heavy base also spreads the heat so the edges do not run ahead.
- Choose wet or dry, and stick to it.Dry caramel is sugar alone in the pan — fast and unforgiving. Wet caramel is sugar with water, which dissolves the sugar first and gives a much wider margin, at the cost of taking longer. For anyone who has just burnt a batch, wet is the answer.
- Swirl, do not stir.Once the sugar is melting, tilt and swirl the pan to even the colour. Stirring introduces crystals and gives you grainy caramel instead — a different fault entirely, covered in `fix-crystallised-caramel`.
- Watch the colour and know your target.Pale straw is lightly nutty. Amber is the usual target for sauces and desserts. Deep copper is bitter behind the sweetness and is what a salted caramel wants. Beyond that it is acrid and unusable.
- Come off the heat a stage early.The pan carries enough heat to darken the sugar by roughly one stage after it leaves the hob. If you want amber, take it off at pale amber.
- Stop the cooking immediately.Either add the warmed cream or butter — standing well back, because it will erupt — or plunge the pan base into cold water for a few seconds. Doing nothing means it carries on.
- Taste before you commit it.A spoonful on a cold plate, cooled for a few seconds. Bitterness that seems slight in a hot caramel is much more pronounced in a finished dessert.
Tips
- Everything you will add should be ready and at hand before you start. Caramel gives you no time to go looking for the cream.
- A pinch of salt at the end sharpens caramel and makes a slightly-too-dark batch taste deliberate rather than accidental.
- Cleaning a caramel pan is easy: fill it with water and bring it to the boil. The sugar dissolves completely. Do not scrape at it.
- For a crème caramel or a tarte tatin the caramel goes darker than you would want in a sauce, because the fruit or the custard dilutes it.
Common mistakes
- Walking away from the pan — The final darkening takes seconds. Almost every burnt caramel happened while someone answered a question.
- Adding cold cream straight from the fridge — It erupts violently, which is dangerous, and it can seize the sugar into a solid lump. Warm the cream.
If it doesn't work
Acrid, harsh, smells of smoke
Cause: Taken past dark copper. — Fix: Nothing. It cannot be diluted or sweetened back. Throw it away, wash the pan and start again.
Bitter but not acrid
Cause: Cooked one stage past the target. — Fix: Usable in a salted caramel or a dark sauce where bitterness is wanted, or balanced with cream, butter and salt.
Dark at the edges, pale in the middle
Cause: Thin pan, or heat concentrated on one part of the base. — Fix: Swirl continuously and use a heavy pan; move it around the burner if the hob has a hot spot.
Grainy rather than burnt
Cause: Crystallisation from stirring or a stray crystal. — Fix: See `fix-crystallised-caramel`.
Seized into a solid lump when the cream went in
Cause: Cold cream shocked the sugar. — Fix: Warm the cream first. A seized caramel usually remelts over a low heat with patience.
Went dark while you fetched the cream
Cause: Carryover heat. — Fix: Have every other ingredient measured and beside the hob before the sugar starts to colour.
